NATIONAL COCONUT DAY

Summer starts in earnest on June 26th when National Coconut Day arrives! The coconut offers sweet support for our bodies in several ways.

Coconut oil alone falls into the superfood category due to its medium chain triglyceride (MCTs) content and all that they seem to do. Whether supporting a weight loss program, moisturizing skin, and hair or metabolizing into energy, coconut oil plays a significant role for your body.

We use the whole coconut in many different forms for our body and everyday cooking. From shredded coconut to milk, cream, water, and oil, each provides essential nutrients and flavor. Its anti-viral and anti-microbial properties are notable as well.

Coconut is rich in fiber, Vitamin B6, iron, and minerals like magnesium, manganese, phosphorus, selenium, and zinc. The oil from coconut moisturizes our skin and also help keep our skin clear and hair silky, too.

Of course, in the kitchen, we love coconut! Beyond baked goods, coconut infuses sweet flavor to our cooking, and because the MCTs in coconut oil don’t absorb in the body as fat, it is an ideal alternative to other oils and fats.

The flavor of coconut oil makes the best air-popped popcorn. Add coconut milk to your curry recipe and win rave reviews! Those who are lactose intolerant and craving ice cream know that coconut milk also makes an excellent substitute for creamy homemade ice cream. And of course, it’s not summer without a piña colada!

Beyond the fruit and water of the coconut that we consume, the husk and shells are used as a potting medium, carbon filtration, charcoal, bio-fuel, and even organic cat litter. The husks are also used to make coir, which is used in making mattresses, doormats, and more.

The Coconut Coalition of the Americas founded National Coconut Day to celebrate the mighty coconut and increase awareness of its benefits. It’s more than just a baking staple.

The Coconut Coalition of the Americas (CCA) was founded in 2017 when coconut industry stakeholders realized there needed to be one unified voice for the North American coconut trade. Industry members came together to steward the category and promote the facts about coconut oil and coconut products.

NATIONAL CANNED FOOD MONTH

National Canned Food Month in February is a time for a second harvest! Your pantry and shelves provide the bounty of canned goods from last fall. Shop your pantry shelves for meals now and make room for the bounty to come.

The story of canned food goes back to the waning years of the French Revolution and Napoleon Bonaparte’s offer of 12,000 francs to anyone who could develop a method of preserving food for his army. Frenchman Nicolas Appert claimed the prize by discovering that applying heat to food in sealed glass bottles improved its shelf life. As a result, Appert’s research led to the current canning methods.

Opening tin cans was a chore. Most people opened them using a chisel and hammer. However, the French army took a different approach: they used bayonets. Then, in 1855, an English surgical instrument maker named Rober Yates invented the first tin-opener.

Modern Technology

Modern canning continues to provide benefits. It saves money and reduces waste so gardeners can reap the rewards of their hard work all winter long. It’s also is also Earth-friendly. Properly preserved foods both taste great and are healthful, too. Ball Mason Jars are the most widely used canning jars, and they are recognized on November 30th during National Mason Jar Day!

There are several methods of canning, and each has its advantages. First, water bath canning is a lower temperature process ideal for jams, jellies, salsa, and tomatoes. The second is pressure canning. The process involves a higher temperature and works best when canning meats, poultry, seafood, chili, and veggies. The third and simplest method is open-kettle canning. In this process, hot food is poured into hot jars then sealed. This canning method is the least recommended. It is very important to learn the principles of keeping food fresh and discouraging bacteria growth. Study the various canning techniques carefully and make sure you are properly equipped before you start.

If we’ve learned anything in 40 plus years in Florida it pays to keep these pantry items on hand.  From hurricanes and Covid to the snow this January having backups to fresh food on hand can literally save your life.  It’s something to keep in mind.  We keep a stock year round, it’s Florida after all.  Not only is it quick and easy on a busy day, but in disaster situations you can actually heat the can if you have to.

NATIONAL CANNED FOOD MONTH HISTORY

The Canned Food Information Council designated February as National Canned Food Month in 1987 to break down misconceptions surrounding canned food as being less nutritious than fresh. Depending on the variety of fruits and vegetables, what they are packed in and served with will make a difference in their nutritional value.

NATIONAL FRAPPE DAY

National Frappe Day on October 7th honors a versatile drink with numerous combinations, so there are flavors to suit everyone. Frappes typically are blended drinks made with either coffee or espresso and topped with whipped cream..A Frappe may also refer to.

  • Frappe coffee – a blended coffee beverage
  • A frozen fruit-flavored dessert made with shaved ice
  • A milkshake
  • Any blended frozen beverage, including a more savory drink made with clam juice

Recipes for coffee frappes can be found in the late 1890s. These blended beverages refreshed and delighted. Adding cream gave the beverages a smoother texture. Even a blended, frozen tea on a warm day took on a whole new flavor. The tastes and recipes have come a long way from their beginnings in the 1980’s. Now you can have your choice of places to get one. McDonald’s, Starbucks, Dunkin, and even make them at home. You can pick your favorite flavor or use a copycat recipe out there. Enjoy this cool treat on a hot day.
