NATIONAL CHEESE LOVER’S DAY

On National Cheese Lover’s Day, don’t feel bleu, throw a feta or act capricious. January 20th is a gouda day to kummin over and have some sharp cheddar, munster, or fontina! 

There is no firm evidence of how cheese making was discovered. but legend tells us it was likely by chance that someone created the first cheese. Thousands of years ago, people transported milk and stored it in sheep’s stomachs. Left to sit a few days, the proteins would separate into curds and whey. From there, preserving the solids with salt may have seemed a logical next step. Salt was a highly valued preservative in ancient times.

The earliest record of cheese making dates back to 5,500 BCE in what is now Poland. Today there are over 1,400 varieties of cheese.

Basic Cheese Making

The basic principles behind making cheese are quite simple. Let the milk sour (or scientifically, coagulating the casein protein). Then separate the curds (solids) from the whey (liquid). The curds are then salted and left to age.

Bacteria, enzymes or fungi may be added at various stages. These along with the type of milk, temperature, time, and moisture are all controlled to produced the desired taste, color, and texture. Herbs and spices may also be added.

The nutritional value of cheese varies depending on the variety. Cottage and mozzarella cheese are at the lower end of fat and calories per serving while mascarpone and cream cheese pack it on. Marscapone makes desserts like tiramisu rich and creamy.

April is the fourth month of the year and consists of 30 days on the Grеgоrіаn саlеndаr and іtѕ рrеdесеѕѕоr, the Julіаn саlеndаr. Itѕ nаmе is derived from thе Latin wоrd aperit, which means “tо ореn.” In the Northern Hemisphere, April is a part of the growing season. The sun warms the earth, awakening the plants and blossoms and leaves “open” bright and new. It is аlѕо bеlіеvеd thаt the mоnth’ѕ nаmе is named after the Greek gоddеѕѕ, Aphrodite (Aphros).

April wasn’t always the fourth month. Originally, the Roman calendar placed the month second, though it still соnѕіѕtеd оf 30 dауѕ. It became the fourth mоnth соnѕіѕtіng оf only 29 dауѕ when January wаѕ dеѕіgnаtеd thе fіrѕt month of thе уеаr around 450 BCE. Aрrіl became 30 dауѕ lоng again whеn Julius Cаеѕаr rеfоrmеd thе calendar.

April’s full moon is called the Pink Moon and represents the pink phlox flower that blooms in April. When the Pink Moon is also the first full moon of spring it is called the Paschal moon.

April is also a terrific month for sports. The official baseball season begins. Golf gets into the swing of things, too plus basketball and hockey are in the midst of their regular season. Professional soccer is heading toward season finales.

NATIONAL STRING CHEESE DAY

It’s time for America to stand together in support of our love for String Cheese. Join us as we celebrate National String Cheese Day on September 20. Whether you call it String Cheese, Snack Cheese or Cheese Sticks…there’s no denying that you call it delicious!   

Pack it for a picnic or a hike. Pass it out for a team snack. And of course, no lunch is complete without this tasty treat. You’ve got to hand it to String Cheese—it’s the fun, easy and protein-packed food that goes wherever you do! It’s no wonder String Cheese has so much “a-peel” with both kids and adults alike. Usually made with mozzarella, String Cheese melts easily when heated making it an excellent addition to recipes, too.

Perhaps the most enjoyable part of String Cheese is deciding how to eat it. Most people go for the classic “peel down and chow down” method—separating each stick into thin strands. (After all, it is kind of fun to play with your food!) Others prefer the “get down to business” approach of removing the wrapper and biting into the stick.
