These soft pillowy cookies melt in your mouth and taste great decorated or not. If taking these to a party or event I really reccomend a double batch. My family is always disappointed if I give them all away. They make excellent Christmas gifts too.

Ingredients

1 cup granulated sugar
1/2 cup butter (we like unsalted)
2 eggs (room temperature is best)
1/2 cup sour cream
2 tsp pure Vanilla extract
3 cups all purpose flour
(For extra fluffy cookie use cake flour)
1 1/2 tsp Baking Powder (check date)
1/2 tsp Baking soda
1/2 tsp iodized salt


Directions


  • Pre-heat oven to 350°
  • Cream butter and sugar until light and fluffy about 7 minutes on high
  • Add Sour cream, eggs and vanilla
  • Mix well until combined
  • In separate bowl mix flour, baking powder, salt, baking soda
  • Whisk well to combine
  • Add flour mixture to creamed butter on low speed about a cup at a time
  • Cover and refrigerate at least 3 hours but,overnight is best.  You can freeze for ready made cookie dough. Just seal well.
  • Line baking sheets with baking mats or parchment paper
  • Scoop about 3 Tbsp of dough into a round ball, place about 1 1/2 inches apart on baking sheet
  • Flatten balls gently with bottom of a glass.
  • Pro-tip try a decorative glass like some juice glasses to imprint ready made stamp decoration on cookie.  Or use a wire whisk to gently press a star design
  • Bake in pre-heated 350° oven about 11 to 12 minutes. After cooling about 5 minutes remove to wire rack to cool completely if decorating
