Homemade Chicken Noodle Soup

With the fall season change, we get cooler temperatures and football.  We also get cold and flu season.  At some point in your life, I’ll bet you’ve heard chicken soup is the popular choice when a cold or flu comes home with you. Turns out there are health benefits to this comfort food that can help you recover. Cozy plush warm robeI recommend making your own and stocking it in the freezer. As my husband is both diabetic and on a low salt diet, it’s easier to control the ingredients.  It’s great on a just a winter evening or battling a bug. Homemade Chicken Soup

2-3 lbs chicken breasts or thighs

2 tsp olive oil

3 Tbsp fresh minced garlic
3 tsp grated ginger
1 medium onion diced
1 cup diced fresh carrots
1/2 cup diced celery
4 cups low sodium chicken broth
1 tsp Italian seasoning
1 tsp black pepper
Pinch of red pepper flakes if desired.
2 cups uncooked egg noodles (use low carb options here if prefer)

Optional ingredients are 1 cup mushrooms, 16 oz fresh spinach, 2 cleaned and chopped leeks, 2 tsp turmeric, and 16 oz white beans.  I only add some or all if making a more hearty main dish. Stick with less if using for cold and flu.

  1. Cut chicken into 1/2 inch cubes.  In a Dutch oven add 2 tsp olive oil and chopped chicken.
  2. Cook over medium-high heat until chicken is seared.  (I like mine golden color for flavor).
  3. Add onions, garlic, and ginger.  Reduce heat to medium.
  4. Add carrots, Italian seasoning, celery, and both black pepper and red pepper flakes if desired.
  5. Cook about 10 minutes stirring frequently.
  6. Add chicken broth.  Reduce heat to low and cover.
  7. Simmer on low heat for about 30 – 45 minutes until carrots are tender.
  8. Add cooked pasta. Cover. Let simmer 10 minutes.
If freezing put in yogurt cups or red solo cups on a sheet tray in the freezer. Once frozen remove cups and put in a gallon freezer bag. Now it’s perfectly portioned for single servings.Make extra soup, then ladle it into red Solo cups to freeze. Grab one or two cups' worth to defrost anytime you need a quick dinner. Ok, so if you’ve searched on places like Google or Pintrest, you’ve seen thousands of entries about blogging. Most tell you how easy it is and give suggestions like I am, “What is the difference you ask? I am only recommending what I actually use. I’ve studied and tried quite a few to find what works the best for me.

Positive Thinking Day

September 13, 2019, in spite of being Friday the 13th is Positive Thinking Day.

Is life getting you down? If your answer is a yes, then Positive Thinking Day (PTD) on September 13 is just the holiday you need to celebrate. Choose to be positive even with all those Friday the 13th superstitions going around. My black cat, for instance brings nothing but love and cuddles.

How to Celebrate?

  • Think positive! If you are having trouble believe that the glass is half full, then have a friend or a loved one reaffirm you.
  • Take or sit in a positive thinking seminar. Sometimes hearing about the benefits of positive thinking from an uninvested party can help.
  • Make a conscious decision not to put yourself down every time you do something wrong.
  • Laugh as much as you can. Laughter can reduce stress and decrease the urge to think negatively. Go out for a comedy show or movie, do a marathon of your favorite comedy TV show or read a comic novel. You will see a marked difference in how you feel after a few laughs. After all, someone wise did once say laughter is the best medicine!
  • Still feeling a bit low? Turn that pity party into an awesome dance party. Studies have shown that physical exercise can help alleviate mood and promotes positive thinking.
  • Do something nice for yourself, a loved one or a stranger – doing good deeds can help increase levels of optimism.

Flag Day

In America we fly our stars and stripes with pride. Indeed over many years, and many styles have come to be the “Stars and Bars” we see today. This symbol of our country is a lot more than a mere piece of cloth. This flag has consistently stood for freedom both here at home and around the world.

This flag has seen us from the times of the American Revelution, and Civil War, through the times of today in places like Syria, Libya, Afganastan, Iraq, Suadia Arabia, Korea, France, Germany, Vietnam, Puerto Rico, and many others. It has been welcomed around the globe by people liberated from oppression, persecution, tyranny and any other entity that holds peoples inaliable rights hostage. I am saddened by the events I see in the news today. As June 6th was the 75th Anniversary of D-Day its difficult to understand how we have come to this state of affairs. From D-Day our troops joined forces with many nations and were welcomed with great celebration in cities and villages across France, Poland, Russia, Italy, Great Britain, Belgium, Czechoslovakia, Luxembourg and so many others. After liberating North Africa from the invasion force of the Axis powers.

Throughout our long history the men and women of our armed forces have sacrificed and died for the ideals in America and the freedoms we enjoy. Indeed those freedoms are so precious that we have people coming to our shores for the last 527 years. If you were lucky enough to be born here we should remember how hard won some of our freedoms are. Even in todays modern world people are still yearning for some of the basics we take for granted.

Since some of the etiquette has been forgotten over time here is the etiquette for the American Flag.

The standards below are from USflag.org I am simply publishing to my readership to remind them why our flag is both important and the proper way to care for and handle one. Anyone who has been given a folded flag fully understands the price of it and knows the value of which they hold.

Flag Etiquette

STANDARDS of RESPECTThe Flag Code, which formalizes and unifies the traditional ways in which we give respect to the flag, also contains specific instructions on how the flag is not to be used. They are:The flag should never be dipped to any person or thing. It is flown upside down only as a distress signal.The flag should not be used as a drapery, or for covering a speakers desk, draping a platform, or for any decoration in general. Bunting of blue, white and red stripes is available for these purposes. The blue stripe of the bunting should be on the top.The flag should never be used for any advertising purpose. It should not be embroidered, printed or otherwise impressed on such articles as cushions, handkerchiefs, napkins, boxes, or anything intended to be discarded after temporary use. Advertising signs should not be attached to the staff or halyardThe flag should not be used as part of a costume or athletic uniform, except that a flag patch may be used on the uniform of military personnel, fireman, policeman and members of patriotic organizations.The flag should never have placed on it, or attached to it, any mark, insignia, letter, word, number, figure, or drawing of any kind.The flag should never be used as a receptacle for receiving, holding, carrying, or delivering anything.When the flag is lowered, no part of it should touch the ground or any other object; it should be received by waiting hands and arms. To store the flag it should be folded neatly and ceremoniously.The flag should be cleaned and mended when necessary.When a flag is so worn it is no longer fit to serve as a symbol of our country, it should be destroyed by burning in a dignified manner.Note: Most American Legion Posts regularly conduct a dignified flag burning ceremony, often on Flag Day, June 14th. Displaying the Flag OutdoorsWhen the flag is displayed from a staff projecting from a window, balcony, or a building, the union should be at the peak of the staff unless the flag is at half staff.When it is displayed from the same flagpole with another flag – of a state, community, society or Scout unit – the flag of the United States must always be at the top except that the church pennant may be flown above the flag during church services for Navy personnel when conducted by a Naval chaplain on a ship at sea.When the flag is displayed over a street, it should be hung vertically, with the union to the north or east. If the flag is suspended over a sidewalk, the flag’s union should be farthest from the building.When flown with flags of states, communities, or societies on separate flag poles which are of the same height and in a straight line, the flag of the United States is always placed in the position of honor – to its own right.

..No other flag ever should be placed above it.
..The flag of the United States is always the first flag raised and the last to be lowered.When flown with the national banner of other countries, each flag must be displayed from a separate pole of the same height. Raising and Lowering the FlagThe flag should be raised briskly and lowered slowly and ceremoniously. Ordinarily it should be displayed only between sunrise and sunset. It should be illuminated if displayed at night.
The flag of the United States of America is saluted as it is hoisted and lowered. The salute is held until the flag is unsnapped from the halyard or through the last note of music, whichever is the longest.

Displaying the Flag IndoorsWhen on display, the flag is accorded the place of honor, always positioned to its own right. Place it to the right of the speaker or staging area or sanctuary. Other flags should be to the left.The flag of the United States of America should be at the center and at the highest point of the group when a number of flags of states, localities, or societies are grouped for display.When one flag is used with the flag of the United States of America and the staffs are crossed, the flag of the United States is placed on its own right with its staff in front of the other flag.When displaying the flag against a wall, vertically or horizontally, the flag’s union (stars) should be at the top, to the flag’s own right, and to the observer’s left.

Parading and Saluting the FlagWhen carried in a procession, the flag should be to the right of the marchers. When other flags are carried, the flag of the United States may be centered in front of the others or carried to their right. When the flag passes in a procession, or when it is hoisted or lowered, all should face the flag and salute.

The SaluteTo salute, all persons come to attention. Those in uniform give the appropriate formal salute. Citizens not in uniform salute by placing their right hand over the heart and men with head cover should remove it and hold it to left shoulder, hand over the heart. Members of organizations in formation salute upon command of the person in charge.

The Pledge of Allegiance and National AnthemThe pledge of allegiance should be rendered by standing at attention, facing the flag, and saluting.
When the national anthem is played or sung, citizens should stand at attention and salute at the first note and hold the salute through the last note. The salute is directed to the flag, if displayed, otherwise to the music.

The Flag in MourningTo place the flag at half staff, hoist it to the peak for an instant and lower it to a position half way between the top and bottom of the staff. The flag is to be raised again to the peak for a moment before it is lowered. On Memorial Day the flag is displayed at half staff until noon and at full staff from noon to sunset.The flag is to be flown at half staff in mourning for designated, principal government leaders and upon presidential or gubernatorial order.When used to cover a casket, the flag should be placed with the union at the head and over the left shoulder. It should not be lowered into the grave.

Happy Father’s Day

Happy Fathers Day…. in society today that term is special.  Anybody can be a father,  but Daddy is a big job!!!  Growing up I can remember meeting my dad when he came home from work.  Blue collar all the way,  bear hugs, and tickles came with him.  He smelled of coffee, engine grease, and Brut aftershave.  He worked hard everyday, sometimes two jobs and had  very definate ideas that some find old fashioned.  For all our differences of opinion as an adult I can honestly say i’m greatful for being raised this way.  We learned the value of a dollar, manners, and respect.

.                          Daddy’s  chase away monsters under the bed or in the closet.  He worked hard for our family and spent time with us growing up.  He took imaginary phone calls, drank tea at tea parties, and helped mom make the coolest blanket forts.  Daddy’s  are mysterious creatures and I’ll explain what I mean.  Mine was a real ‘guy’.  He didn’t do things in the kitchen unless it was a Saturday or Sunday.  He did not wear blue jeans.  Button up shirts, flannel in winter.  Dad made the waffles or pancakes. (Mom had to make the eggs and bacon… He didn’t do that).  Electronic toys are great but, I learned how I should be treated by my future husband, by watching  his example.  Mine wasn’t perfect but he was perfect for me.

I remember having one of those moments in time where you realize how lucky you are.  At my younger brothers wedding I watched his bride dance with her father, of all my siblings I was fortunate enough to have a father daughter dance.  I miss the whit and gentle teasing.  I would meet him for breakfast, at a really early hour.  That was one of his quirks, if he had to be up extra early he thought we should too.  This sucked growing up on Saturday mornings.  Unless he was making bbq, he spent years perfecting that.

I carry him with me everyday, as I passed on to others he lives on in my heart.  I see his example shine through when my brothers play with their children.  Even when they don’t want to admit it.  My dad lost his battle with cancer in 2011.  I vividly remember in coming to terms with his death how lucky we were to grow up in a world where more and more families fathers are absent.   I wish they had visiting hours in heaven, but until they do, Daddy I Love You.  To all the dads out there I hope you become the hero in your family.  Daddy’s help us see ourselves like this.

To all the dads especially if you grew up without one and know find yourself in the role.  Spend as much time together as you can.  To my half siblings I hope you got to spend time with the same father I grew up with.  Children have no owners manuals and parents genrally do the best parenting they are able.  I hope both children and adults remember that word of wisdom mine left with me.
