NATIONAL GRAHAM CRACKER DAY

July 5th recognizes 1/3rd of the s’more. It’s National Graham Cracker Day! Hopefully, you saved a few crackers if you were busy making s’mores over the Independence Day holiday. 

When Sylvester Graham first invented the slightly sweetened cracker, he intended it as a health food. In the early 1800s, the Presbyterian minister developed the cracker as part of his “Graham Diet” program. They were made from whole wheat graham flour with added bran and wheat germs. He believed his snack would curb sinful cravings. 

Today, makers use bleached white flour and blend a variety of flavors including honey, cinnamon, and chocolate. They also come in smaller bite-size snacks and fun shapes. 

While a delicious snack on their own, they also make terrific ingredients for desserts. Crushed graham crackers blended with butter and pressed into pie tins, or springform pans make excellent crusts when lightly toasted. Graham crackers layered between yogurt and fruit taste delicious in a parfait. When it comes to crumb toppings, oats, brown sugar, butter, and crushed graham crackers blended together and lightly toasted will always satisfy.

Graham Cracker Sandwiches

Some of the easiest ways of using graham crackers are making a type of sandwich. Of course, one of the most popular treats made with graham crackers is the S’more. However, that’s not the only type of sandwich we can make with these sturdy crackers.

  • Ice cream sandwiches – It’s summer, so head to the freezer. Just one scoop of ice cream between two crackers is all it takes. Wrap the sandwich in wax paper and place it back in the freezer for 30 minutes to an hour. 
  • Nut butter sandwiches – Whether it’s peanut butter, hazelnut, or sun butter, spread your favorite between two crackers and enjoy. 
  • Fruit sandwiches – Layer banana or strawberry slices between two crackers. Add nut butter. 
  • Frozen fruit sandwiches – Puree your favorite fruit and then freeze slightly. Spread the pulp on the crackers and refreeze just like you did the ice cream. These sweet treats are delightfully refreshing!

During Christmastime, graham crackers go into overtime. They join forces with gingerbread and create magical houses with frosting. The edible delights may not last very long, but they make memories that last a lifetime.

Using a raw (or coddled) egg and Worcestershire sauce as the main ingredients, Chef Caesar Cardini developed a salad that has stood the test of time. He added parmesan, dijon mustard, and lemon juice for brightness. A dash of salt brings all the flavors together. Beautifully, the ingredients rest on a bed of romaine lettuce with croutons. Once garnished with freshly grated parmesan, the salad is ready to be served. Considering it is found on nearly 50 percent of the restaurant menus across the country, it is served with frequency.

While most Caesar dressings include anchovies today, the original did not. Chef Cardini used Worcestershire sauce, which is derived from anchovies. NATIONAL CAESAR SALAD DAY HISTORY

We were unable to identify the founder of National Caesar Salad Day. However, this day is relevant to the history of the Caesar salad.

During the holiday weekend of 1924, Caesar Cardini created the Caesar salad for an elite Hollywood crowd at his Tijuana, Mexico restaurant. The Independence Day weekend called for a little extra excitement at the dinner table. As part of the service, Cardini made a dramatic performance of mixing the salad as his guests watched. He tossed the ingredients with great panache and flair, much to the thrill of those around the table. The display was such a success, preparing a Caesar salad today continues in much the same fashion out of tradition.

NATIONAL ANISETTE DAY

On July 2nd, we recognize a liqueur derived from aniseed on National Anisette Day. Aniseed from the anis herb gives anisette its licorice or fennel flavor. While usually a dry dry liqueur, distillers sometimes add a sugar syrup for a sweeter result. Spain, Italy, Portugal, and France lead the world in drinking this licorice tasting drink.

The herb of the aniseed, usually the main ingredient in anisette, is considered to have medicinal qualities. Sweeter than other anise-flavored liqueurs, anisette’s association with a variety cures date back to ancient Egypt. As a liqueur, distillers create a dryer anisette in Europe than they do in the United States. Distillers add other spices such as coriander and fruit to distill anisette, too.

While most enjoy anisette by sipping it, the liqueur can be mixed as a cocktail, too. However, pure anise extract should not be drunk straight. Since its alcoholic content is high, it irritates the throat. However, mixing it in with coffee, gin, bourbon, or water will bring out a bit of a sweet flavor. The solution? Bake some anise cookies!

If you’re the one who eats all the black jelly beans, you will likely savor a shot with anisette. The licorice flavor comes from the same anise plant that some licorice candies are made.

NATIONAL CELL PHONE COURTESY MONTH

National Cell Phone Courtesy Month during July encourages us to evaluate our cellular habits and consider others before we reach for our phone.

Our phones have become an integral part of our lives. We schedule events, organize shopping lists, order birthday presents and communicate all from this one, small device. Do we even make a phone call any more?

Phone courtesy has always been in fashion, but when they became smart, it seems we lost a few brain cells.  National Cell Phone Courtesy Month strives to bring polite phone usage back in style.

Dos and Don’ts
  • Silent the phone whenever you’re spending time with anyone. That includes work, a meal, meeting or with family. If you are attending a performance of any kind, turn the phone off. There are exceptions to this rule for medical professionals or other expectant emergency situations.
  • Rude Do not expect to be waited on if you are on your phone. There is nothing as rude as being on your phone and pointing at people to come wait on you.
  • Hidden phones are forgotten phones. We pay attention to the people in the room, the performance, or the meeting. It’s also a signal to the people we are with that they are important to us.
  • Step away if you do need to take a call. No one needs to hear your conversation while trying to enjoy a meal for two.
  • Shhh. Monitor the volume of your voice. Even when you step away, voices carry.
  • Pause before sending emails, texts or social media posts. Consider the content, especially if it is posted in haste. Ask yourself the following questions. Sometimes just the need to ask will be all the answer you need before deleting the comment or text.
    • Will I regret sending this later?
    • Am I angry?
    • Will this hurt someone?
    • Is this appropriate?
    • Will this affect my job or relationship?
  • Don’t use your phone and drive. Many states prohibit cellular use or limit it to hands-free only. Any message can wait until you arrive at your destination. If it truly is urgent, pull to a safe stopping area to receive the message or call.
  • Don’t let your mobile device become a social hindrance. We often look to our phone for social engagement when we don’t know what else to do. Meet new people when you are in a new circle of people and begin networking with the people near you. Expand your social circle face to face and broaden the world around you.
