NATIONAL DAIQUIRI DAY

Each year on July 19th, people across the United States fill their glasses with a rum-based cocktail and toast to National Daiquiri Day. So, raise your glass and join all of the others in this celebration!

Daiquiri is a family of cocktails whose main ingredients are rum, citrus juice (typically lime), and sugar.

Tasting of sunshine and beaches, it might be hard to believe how the Daiquiri came to be. Back in 1898, men blasted away in the mines of a small community off the coast of Cuba during the Spanish-American War. One American engineer, Jennings Cox, supervised a mining operation located in a village named Daiquiri. Every day after work, Cox and his employees would gather at the Venus bar. Then one day, Cox mixed up Bacardi, lime, and sugar in a tall glass of ice. He named the new beverage after the Daiquiri mines, and the drink soon became a staple in Havana. Eventually, someone added shaved ice, and sometimes lemons or both lemons and limes were used.

In 1909, Admiral Lucius W. Johnson, a U.S. Navy medical officer, tried Cox’s drink and subsequently introduced it to the Army and Navy Club in Washington, D.C. The popularity of the Daiquiri then increased over the next few decades.

The Daiquiri was one of the favorite drinks of writer Ernest Hemingway and President John F. Kennedy.

While the Daiquiri is sometimes served frozen, combining it in a blender eliminates the need for manual pulverization. Commercial machines produce a daiquiri with a texture similar to a smoothie, and they come in a variety of flavors, too. Using a frozen limeade to create a daiquiri will provide the required texture, sweetness, and sourness all at the same time.

Jen’s Loaded Nachos

These started out as a great alternative to traditional recipes of tacos, enchiladas, or Doritos casserole. They make a great meal, snack, or game day favorite too.

Ingredients

2 lbs minced beef or chuck
1 medium yellow onion diced
1/2 medium bell pepper chopped
2 Roma tomatoes diced
Sour cream (we like Daisy in squeezeable application)
Chucky salsa (we like taco bell mild)
1 – 16oz fiesta blend shredded cheese
Guacamole if desired
1 lg bag Tostitos Scoops (you can use any kind of totilla chip you prefer these just make handy cups)
2 pkg McCormick Taco seaoning. Chopped jalapeno, black olives, melted cheese sauce, are optional.
You can make to many variations to list, including chicken, steak, salsa verde, lime, and anything else you can dream up.  I make mine like our family taco night.

Directions

Spread tortilla chips on a large platter

Top with meat, veggies, cheese, sour cream, salsa, cheese sauce, etc…

I choose my toppings based on our likes. I am not a fan of refried beans, but love shredded lettuce.

NATIONAL NACHOS DAY

On November 6th, National Nachos Day recognizes the snack favored at sporting events across the country. In their purest form, nachos are tortilla chips covered in nacho cheese, queso or other melted cheese and served with salsa.

Where Nachos Began

First created sometime around 1943, the popular and loved nachos are of Mexican origin.  

History tells us that Ignacio “Nacho” Anaya created the original nachos in 1943. According to his son, Nacho was the maître d’ at the El Moderno Restaurant in Piedras Negras. One evening after the kitchen staff had left, a group of U.S. Army wives stationed at Fort Duncan in Eagle Pass came into the restaurant. After a long day of shopping, they were hungry and asked for a snack.

Anaya prepared some tostadas cut into triangles. After topping them with shredded cheese and sliced jalapenos, he heated the dish in the oven. They were such a hit with the Army wives that they named the snack “Nacho’s Special” before he could make another batch.

Word of the new creation quickly traveled. People from all over tried them, loved them, and over time, the name changed. Eventually, Nacho’s special became special nachos.

The original recipe is printed in the 1954 St. Anne’s Cookbook. 

The popularity of the new dish spread swiftly throughout Texas and the Southwest. And since then, it has gained millions of fans across America.

Nachos Today

We love nachos so much, we top them with all sorts of things. Sometimes we even go overboard. We call nachos with an abundance of toppings loaded nachos, super nachos, or nachos supreme. Serve them as a snack, an appetizer, or even prepared with extra ingredients as a full meal.

Since the time of the original nachos, the toppings have expanded. Today we add beef, chicken, and seafood along with a variety of seasonings. This snack even satisfies the pickiest eater. Whether you’re a vegan to full-on carnivores, there’s a nachos recipe for you.

In restaurants across the country, nachos find their way onto the menus of other cuisines, too. Some restaurants substitute the chip with a potato base. Another option is to replace the toppings with ingredients from the culture. For example, to make Italian nachos top the chips with mozzarella cheese and Alfredo sauce. Asian nachos may include wasabi or curry. Each version of nachos brings its own unique flavor to the table.

National Margarita Day on February 22nd rims a glass with salt and serves up a beverage that tastes like the summer sun.

Known to be the most common tequila-based cocktail served in the United States, the margarita is a cocktail that consists of tequila, triple sec and lime or lemon juice. A key ingredient is the freshly squeezed lime juice.  In the United States, the most common lime is the thick-skinned Persian lime. When margaritas are made with lemons, they have a much softer taste.

When it comes to sorting out the legends associated with the origin of the margarita, there are many. Two things are certain; the cocktail included tequila, and the bartender edged the rim of the glass with salt. In Mexico, when drinking straight tequila (especially if the quality was bad), the best course of action was to down it in one swallow, suck on a wedge of lime and lick a dash of salt off the back of your hand.

It makes sense that the salt followed the lime and the tequila to the margarita glass. Today, lime is not the only flavor of margarita, and the specialists behind the bar have gotten creative mixing dried herbs, infused sugars and exotic salts to enhance both the presentation of the glass and the flavor of the cocktail. 

Margaritas can be served on the rocks (shaken with ice), frozen (blended with ice), or straight up (without ice).
