NATIONAL GUACAMOLE DAY

National Guacamole Day on September 16 brings fresh flavors together for the perfect celebration. What a great way to kick off Hispanic Heritage Month!

Avocados shine as the star of this dip! Lime juice, tomatoes, onion, and seasonings make guacamole a guilt-free addition to any snack or meal.

Since avocados fall under the superfood category, feel free to indulge. Packed full of good fats and nutrients, along with the fresh taste of lime and hint of spice, the dip is flavorful. It’s easy to make, too. Take it to work or use it for a party dish.

Guacamole is versatile, too. For example, add it as a topping on a quesadilla or even add it to a salad. Of course, the simplest way to enjoy is by dipping your favorite tortilla chip.

Originating with the Aztecs in Mexico, guacamole is an avocado-based sauce that has become popular in American cuisine as a dip, condiment, and salad ingredient. 

Using a mortar and pestle, mash ripe avocados and then mixing in sea salt.  Beyond the tomatoes, onion, garlic, and lemon juice, hot sauce, yogurt or other seasonings can be added.  If a celebration calls for spicier guacamole, add jalapenos, chilis, cumin, or red pepper.

Moooove over whiners! June 4 is National Cheese Day!

An encyclopedia of cheese will cover the alphabet and broaden your vocabulary. It will undoubtedly contain more varieties of cheese than what’s found at the local grocer. Cheese is produced from the pressed curds of milk. The milk can come from cows, buffalo, goats or sheep. Temperature and aging affect the flavor and texture of the cheese as well as spices and other seasonings added during the process.

Excellent as a snack on its own, cheese is also a perfect ingredient in pasta, soups, souffle and many other recipes. WORLD MILK DAY

Real milk takes the spotlight on World Milk Day, always on June 1. The day is intended to bring attention to activities connecting the dairy sector.

The annual observance is marked with events across the globe: milking demonstrations and farm visits; games and competitions; concerts; distribution of milk products; and conferences, seminars and information sharing.

The dairy sector supports more than one billion people’s livelihoods.
More than six billion people globally consume dairy products, making it a $413.8 billion market.

China is the fastest-growing dairy market. Europe, the United States, New Zealand, Australia, and Argentina are the primary dairy-producing countries.

However, drinking milk in the U.S. has been on the decline since about 2000. In the 1980s, more than 50 percent of the dairy products regulated by the USDA was beverage milk. By 2015, that had dropped to 33 percent. Prompting the downward trend, according to market watchers, is the annual decline in the market consumption of ready-to-eat cereals. National Dairy Month in June celebrates the many contributions of the dairy industry to our health and economy.

Dairy products contribute to our health in numerous ways. An 8-ounce glass of milk has more nutrients than the same serving size of juice. It’s packed with protein, too. And cheese is udderly delicious!

Here’s a list of popular dairy products you might find during Dairy Month:

NATIONAL TOTALLY CHIPOTLE DAY

Each year on May 5th, National Totally Chipotle Day celebrates right alongside Cinco de Mayo and is dedicated to the chipotle, a smoked, dried jalapeno pepper. Not to be confused with the restaurant chain of the same name.

There are different varieties of jalapenos and they vary in size and heat. At one time, chipotles were primarily found in the markets of central and southern Mexico.  As Mexican foods became more popular in the more northern areas of North America, the jalapeno production and processing expanded north into the United States.

Chipotles are often an essential ingredient and add a mild spiciness to many different dishes in Mexican cuisine. While you expect to find them in salsas and other sauces, don’t hesitate to use them in other ways, too. Add them to soups and marinades if you want to bring the heat to a dish. Bean or lentil dishes shine when you add chipotle to them. Do you like sweet and spicy flair? Add chipotle to your jellies. When pairing chipotle with a slice of smoky cheese, you won’t be disappointed. Top it on a grilled bbq chicken pizza to wow guests.

You can even add it to desserts for a surprising but delicious twist. For example, homemade dark chocolate ice cream with the hint of smoky chipotle in every bite is a real winner. You can turn down the heat by removing the seeds and membrane or leave them in for a more exciting experience.
