NATIONAL CRAB MEAT DAY

Observed annually on March 9th, National Crab Meat Day (also National Crabmeat Day) offers a day to celebrate one of America’s favorite crustaceans. With 1.5 million tons of crab consumed every year around the world, plenty of crab meat lovers celebrate every year. 

While crab meat is a healthy choice, once you add the butter, the fat and calories add up.  And there are thousands of species of crabs, but only certain ones are edible. In the United States, some of the more popular and tasty ones are the blue crab, stone crab, Dungeness, king, and rock or snow crabs. They come in both hard and soft shells and can be found along all the coasts and Hawaii.

Enjoying the meat of these crustaceans can be done in many ways. Boiled crab, either the legs or the whole creature, results in a feast requiring some labor from the diner. However, every tasty morsel is well worth the effort. Mix the meat with other ingredients to create dips, cakes, or soups.

NATIONAL COLD CUTS DAY  

Dagwood will eat his heart out on March 3rd because it’s National Cold Cuts Day. Call them lunch meats, deli meats, sandwich meats, or cold cuts. Some like them thick, while others stack them mile high. Others still just like them with cheese and crackers. However you like them, National Cold Cuts Day was made for sandwich and snack makers.

There are the deli staples like the humble turkey and ham.  Then there are the culinary delights like salami and prosciutto and flavors that require a more acquired taste like head cheese and braunschweiger. Whatever your taste, there is a cold cut for everyone. Well, everyone except the vegetarian.

Every nationality has a flavor all their own when it comes to seasoning, curing and aging a variety of meats. Spices, smoking, and time alters the taste. When the animal is butchered, temperature and air circulation affect the flavor, too.

It’s essentially an art history lesson all rolled into one, and at the end of it all, there’s mouth-watering food that can be enjoyed with friends and a good beverage.

Or, it’s merely a piece of meat meant to make a meal. Breaking bread with friends sounds so much more delightful, though.

Bologna is one of the most popular cold cuts in the United States due to a famous commercial. Named after the Italian city of the same name, bologna is similar to an Italian sausage called Mortadella.

Other popular cuts are chicken, roast beef, pastrami, corned beef, and pepperoni.

NATIONAL CLAM CHOWDER DAY

Each year on February 25th people across the nation have a bowl and spoon ready to be filled with clam chowder as they prepare to participate in National Clam Chowder Day.

A clam chowder in its simplest form is a soup or stew containing clams or fish. The most common type of chowder includes milk or cream as well as potatoes, though the Manhattan clam chowder has tomatoes.

The origin of the word “chowder” is up for a little bit of debate.  The French word for cauldron is “chaudiere.”  The English word “jowter” means fish peddler.  Both are on the hook for possible origins.

 In chowder, along with the clams, it is common to find diced potatoes, onions (often sautéed with pork or bacon drippings) and celery. Try pan frying diced spam and mushrooms, caramelized onions are a good touch too.  I add browned tofu in place of potatoes with extra mushrooms to make it keto friendly.

HOMEMADE SOUP DAY

February 4th heats up with National Homemade Soup Day. In every cuisine, soup provides a rich basis of flavor and history. 

Before the era of modern transportation, soup was a product of regionally available foods. For this reason, there are thousands of soup recipes available today.

Many soups also offer medicinal properties. What was once considered a wive’s tale, chicken soup now has the backing of the scientific community. Yes, chicken soup helps relieve the symptoms of the common cold. How? Well, scientists believe that a bowl of the soup may reduce inflammation of the lungs. It is thought that chicken soup slows down the activity of white blood cells that can cause inflammation.

But that’s not all homemade soup does. Every cook knows the most important ingredient that goes into every pot of simmering soup. They keep the ingredient stored where it will do its best work, too. As they work, they season the soup from their heart giving it just the right amount of love each and every time. Whether they add it with the noodles or the vegetable, the broth or the cream, each cook knows there’s enough to go around. That’s why homemade soup heals the best.

New Englad Calm Chowder

I love this creamy soup. So I decided that it was time to make it both in the crockpot, and more like grandma used to make. I also needed it to be more low-carb friendly. So here is the recipe I made with rave reviews. ( My husband makes the “that’s disgusting face” when I talk about making it.) He is now a convert too!

Ingredients

  • 3 – 13 oz cans of minced clams
  • 1 – 12oz can of Evaporated milk
  • 2 – 10.5 oz cans of cream of mushroom soup.  Low sodium if you can find it.
  • 2 Tbsp butter
  • 1/4 tsp black pepper
  • 2 stalks finely minced celery
  • 1/2 cup diced onion
  • 2 cups diced Yukon Gold potatoes and /or keto options
  • 1 – 14oz pkg extra firm tofu cut into 1/4″ cubes sautéed (keto)
  • 1- 12oz Spam diced and sautéed till golden brown (keto)
  • 1 – 16 oz pkg fresh mushrooms sliced
  • 1/4 tsp Old Bay seasoning
  • 1 bay leaf
  • 1/2 tsp chopped parsley
  • 6 slices crispy cooked bacon crumbled to sprinkle on top
  • 1/4 cup mozzarella cheese
  • 1/4 cup Parmesean cheese
  • 1/8 cup sharp cheddar shredded for topping

Directions

Drain clams juice into lined crockpot.

Refrigerate clams until later.

Combine Evaporated milk, Cream soups, butter and celery, onions, black pepper, potatoes, and bay leaf.

Cover and cook on low at least 4 hours.

30 minutes before serving add clams and 1/4″ cubes of extra firm tofu, and mozzarella and Parmesan cheeses.

Stir well to combine without breaking tofu.

Remove Bay leaf, serve warm with crumbled bacon, and shredded cheddar as topping. (You can add finely chopped green onions if desired.)
