When searching for an alternative low carb, keto friendly version of fried chicken, I came up with this recipe. It versatile enough to eat as an entree, on a salad, or as just fried chicken for a picnic.
Ingredients
2 Tbsp Everything bagel Seasoning
1/4 cup Sunflower seeds
1 tsp Blackened Seasoning
12 oz bag Pork rinds crushed
4 Tbsp Bacon bits
2 eggs
Olive oil
1/3 cup Shredded Parmesean cheese
Mix crushed pork rinds, bacon bits everything bagel, blackened Seasoning, and sunflower seeds, in a shallow dish
Cut boneless skinless chicken breasts into cutlets about 1/4 in thick
Break eggs into shallow bowl and whisk
Dip chicken into egg then dry mixture
Cook in skillet over medium high heat about 5 – 7 minutes
Serve warm as an entree, or over freshly made salad
