NATIONAL CHICKEN MONTH

For over two decades, the National Chicken Council has banded together with major chicken producers in the U.S. to promote chicken sales in September. As a result, September is known as National Chicken Month! This once slow month, as the summer grilling season waned, has turned into one of the year’s best performing sales periods. September might be the month we find out which came first, the chicken or the egg.

First domesticated for cockfighting, the chicken eventually made its way to the dinner table. Many families have their own homemade spice recipes. A major part of enjoying chicken is the spicing. Food experts have debated for years about the contents of KFC. White pepper, paprika, and even Thousand-Island dressing are among the eleven herbs and spices supposedly in the Colonel’s recipe.

There are 25 billion chickens in the world, making them the most abundant bird species. Did you know all vertebrate species lay eggs? And, all hard-shelled variety eggs originated with reptiles? Chickens, like many birds, are descendants of the dinosaurs. Chickens are relatively closely related to reptiles on the evolutionary chain. In recent decades, many researchers have started describing dinosaurs as more like flightless birds than reptiles. Even though chickens are not entirely flightless, they can get airborne enough to get over a fence or into a tree.

Ever wonder why so many different meats like rattlesnake and alligator apparently taste like chicken? Several explanations point to why mainstream Americans tend to have limited experience with judging flavor. Our taste buds, in other words, are not finely tuned. Our meat experiences are limited mostly to beef, pork, and chicken. A gourmet with a seasoned palette has a broader experience, which makes them more apt to identify exotic meats like rattlesnake and alligator.

Chicken is full of health benefits. When eaten without the skin, chicken is very lean. It is carb-free and rich in Vitamins B3 and B6, as well as two important minerals, phosphorus, and selenium. Various parts of the chicken are considered special treats in some countries. For instance, in China, chicken feet are considered a delicacy.

NATIONAL FRIED CHICKEN DAY

In the United States, July 6th chicken lovers across the country recognize National Fried Chicken Day by feasting at a nearby restaurant, home, or an outdoor picnic.

Scottish immigrants brought their tradition of deep-frying chicken in fat to the southern United States. After its introduction to the American South, fried chicken soon became a staple. Over time, cooks added seasonings and spices to enrich the flavor of the chicken.

Fried chicken is a dish consisting of chicken pieces floured or battered, then pan-fried, deep-fried or pressure-fried. The breading adds a crisp coating to the exterior of the chicken. Knowing how to get a good crisp on the chicken may seem elusive to some. However, some of the best cooks will tell you the keys to achieving the crispiest fried chicken involves seasoning well and early in the process, adding starch to your flour and frying your chicken at the right temperature. The oil should be 300°F. Finally, let the chicken rest before serving to allow the juices to be absorbed back into the meat. Just like beef and pork, the chicken will be more tender when we allow it to rest.

Traditionally the chicken is fried in lard. However, corn oil, peanut oil, canola oil, or vegetable oil are also frequently used.

We can even enjoy movies in our own backyards projected onto screens under the stars.

NATIONAL HERBS AND SPICES DAY

National Herbs and Spices Day is observed annually on June 10.

It is the season for fresh herbs and spices. They are an essential part of flavorful cooking as well as fun and easy to grow.

Raising your own herbs can be a form of relaxing therapy. Herbs and spices have been used for many hundreds of years, and besides making our food delicious, each has its specific health benefits. Growing your own herbs and spices is a great way to add fresh variety to your food.  Herbs raised in your home add an aromatic and natural fragrance to the air.

Basil, Rosemary, Nutmeg, Garlic, Sage, Tyme, Oregano, Italian, Greek, Cajun, Blackening, Fennel, Chili Powder, Dill, Red Pepper Flakes, Ginger, Paprika, Cinnamon, are among my most used almost every meal. Lavender, Vanilla, Anise, Bay Leaf and Tumeric on occasion as well. It’s a good bet in combination with onions, you’ll find on our table daily. A good mix make Beef Stew, Taco’s and Tex Mex, My Greek Turkey bake, Asian Pork Chops, and don’t forget Spaghetti and My Easy Chili.

I find myself adding to or finessing flavors even if I use a pre-packaged spice mix. Having a hood sense of these help me not only make up my own delicious creations, but help judge recipes to try. I’m happy to be surprised of course although things calling for heavy amounts of Parsley, Cilantro, or heavy amounts of cayenne are things we try to avoid.

NATIONAL ROTISSERIE CHICKEN DAY

On June 2nd each year, chicken lovers celebrate National Rotisserie Chicken Day. While there a numerous ways to cook a whole chicken, rotisserie chicken offers a slow cooking method that seals in flavor.

When cooking chicken using a rotisserie chicken, the whole chicken is cooked on a rotisserie or spit that turns continuously over a heat source. This process slowly roasts and sears the skin to seal in the flavor. The result is a tender and juicy chicken. Some cooks inject rotisserie chicken with a blend of seasonings to give increase the flavor. The popularity of rotisserie chicken continues to grow as the health benefits of it become more widely known.

Rotisserie chicken goes well with a variety of side dishes, too. Whether you like traditional salads, potatoes, rice, and steamed vegetables, or more elaborate dishes, you will not go wrong. You can even use the leftovers in many ways, including salads, sandwiches, and casseroles. It is just as delicious cold as it is hot, too.
