On January 5th kick off your New Year’s resolution with The Keto Diet. The easiest change, and best thing you can do for you and your family.

Okay we’ve all made those resolutions about diet an exercise, now what? I know there are a lot of choices out there. Me I’m staying with what works the best and easiest for me. I lost over 150 lbs after back surgery. My Dr loves this diet now, as I have not only lost weight it keeps my diabetes under control. My husband also a diabetic for years has shown the clinical proof to his Dr as well.

While we are usually, more low carb than strict Keto but so many of the products and recipes work for both. According to the blood work it keeps our overall cholesterol down, bad cholesterol even more and good cholesterol goes up. Blood sugar numbers drop significantly and stay down. In my case it has reversed my type 2 diabetes. Not forgetting the weight loss. One quick note there is a big difference between types if diabetics so please be aware of what type you are, and consult you dr. What works for type 2 could produce bad situations for type 1.

So here’s the good news.  You can have things like chicken, steak, eggs and cheeses, some types of vegetables,  even dairy and things like Dark chocolate.  The bad news is just say “no”, to most breads, pasta, sugar, cake and cookies.  There is a small selection of convenience foods out there.  Here in the south one of the biggest complaints is no macaroni and cheese.

With recipes like Garlic Butter Steak bites, and tons more, chances are they won’t be missed as much as you thought. Even Lasagna can be converted to low carb and Keto Friendly. Veggies like cauliflower, zucchini, broccoli, spinach, take over for potatoes and pasta. Be sure to check My Recipes Page often for new culinary creations.

As we do a none strict version we have learned to change out certain ingredients to make them more friendly. Buy Yukon gold or red potatoes instead of Idaho russets, whole wheat pasta for spaghetti, and with store like Amazon Fresh Groceries we are no longer limited to only what’s on your local shelves.

My best secret is join some groups who share their tips and recipes. Choose the version of Keto that works best for you. Your family will join the bandwagon without major tribulations. Most children only notice the absence of sugary sodas and snacks. Best of all these changes will set them on a path to a much healthier, happier life. Try one of our family favorites and start changing your health. How does the diet work? By eliminating carbohydrates, your body will use up its store of glycogen first. Then it will move into ketosis and begin burning fat.

Primarily, a keto diet consists of healthy fats, like eggs, avocado, olive oil, and sustainably-raised meat. Nuts, seeds, dairy, and low-carbohydrate vegetables such as asparagus, broccoli, and green peppers are also easy to incorporate. Coconut oil, grass-fed butter, and ghee add fat and flavor to a keto diet. Occasionally, small servings of berries are added to the menu.

Eliminate these foods if you are considering a keto diet:

  • sweets, sugar, sodas, baked goods
  • grains, whole grains, and starches
  • fruits, starchy vegetables
  • hydrogenated oils, vegetable oil
  • diet foods, including low sugar, sugar-free, low-fat foods

BACON DAY – December 30

On December 30th each year, bacon lovers celebrate one of nature’s favored gifts on Bacon Day!

Everything is better with bacon. Someone said that once. And our research shows very little to dispute this assertion.

In the United States and Canada, bacon is made from the pork belly. Elsewhere in the world, the side and back cuts of pork are used. The meat is cured in either a salt brine or in a salt pack. It is then either dried, boiled, or smoked.

Bacon is a very popular food in the USA.  You can find many items also flavored or scented with bacon, including popcorn, soap, candles, air fresheners, and much more. While these uses are options, we suggest cooking with bacon.

It’s not just for breakfast anymore, either. Bacon improves everything from beverages to dessert. Some cocktails such as the Bloody Mary and Caesar add bacon to the olives, pickles, and other assorted ingredients. Bacon improves the flavor of many appetizers, sandwiches, and soups. Incorporate bacon into salads as a topping or mix it into the dressing. When it comes to dessert, bacon pairs well with maple frosting or maple ice cream. Thanks to the salty, smoky flavor of bacon, it compliments sweet quite well. The possibilities are endless. 

Bacon is both Keto and blood sugar friendly. Turkey bacon is also a good alternative. My favorite is leaf lettuce used as a wrap. Add Miracle Whip, tomatoes, and two strips of extra cripy bacon for a great tasting BLT without the carbs from bread. Two of these tucked into your lunch box with some cheese sticks and some blueberries makes for a great lunch that will give you plenty of energy till dinner without the 3:00 sleepies.

HOW TO OBSERVE #BaconDay

According to the founders of Bacon Day, we are encouraged to eat a variety of bacon while watching Kevin Bacon movies, or movies with bacon in the title. Since Bacon Day was created before the Discovery Channel show How It’s Made debuted, it’s safe to say, we can eat our bacon and watch those, too. Giving and receiving gifts of bacon is also recommended. Other suggested traditions such as bacon toasts and kissing under pork fat mistletoe are mentioned as well. These sauted sprouts will disappear from the table.  Adults and children alike will offer no complaints once they taste these. 

Ingredients


2 lbs brussel sprouts cut in half
6 chopped slices of bacon
2 oz grated Parmesan Cheese

Directions


  • In medium skillet render chopped bacon until lightly crisp.
  • Remove grease from pan reserving 2 Tbsps. 
  • Use 2 Tbsp bacon fat to saute halved sprouts. About 8 minutes.
  • Add bacon back into pan with sprouts.
  • Sprinkle with grated Parmesan cheese.
  • Cover pan and reduce to low heat. 
  • Cook covered about 5 more minutes as cheese melts and Brussels become tender.
  • Stir in 2 tsp maple syrup
  • Season with a pinch of salt and black pepper.
  • Serve warm.

Brown Butter Garlic Parmesean Mushrooms

These are insanely popular at our table. People who swear they don’t eat mushrooms eat these. These warm butter treats can be served as a snack or a side dish. The only complaint I’ve ever had is there are never enough and I usually make a double batch. See recipe below.

Ingredients

1 lb whole white mushrooms
1 cup browned butter
2 tsp minced garlic
2 tsp thyme
Parsean cheese to top mushrooms

Directions

Separate stems from mushrooms with care not to damage caps.
Dice all stems
Add butter to pan cook on medium-high heat until it turns golden hazelnut in color.  Watch carefully as you do not want to burn.
Add stem pieces, garlic, and thyme to butter. 
Mix well to coat and distribute ingredients.
On a foil covered, well oiled baking sheet place caps about 1/2 inch apart.  Make sure stem well is facing up to make a cup in the top.
Fill with butter mixture till slightly mounding over. 
Sprinkle with salt and pepper to taste.
Add Parmesean cheese to each, covering stem pieces. 
Broil in oven 15 minutes. 
Serve warm.

Extra tip:

You can play with this adding bacon or topping with chives.  Add more cheeses, or herbs.  This is a take on a classic mom has made for as long as I can remember.

NATIONAL DEVILED EGG DAY

National Deviled Egg Day features a favorite hors-d’oeuvre or side dish for parties, holidays, family reunions and potluck dinners. Deviled eggs are the star of the show each year on November 2.

This well-loved food wows guests at the holidays. Designers have even created specially designed carrying dishes and plates. The deli section of the grocery store prepares packaged deviled eggs, and they can be found in some convenience stores, too.

Other names for this devilish dish include eggs mimosa, stuffed egg, salad eggs or dressed egg. To make them, hard-boiled eggs are shelled, cut in half and filled with the hard-boiled egg’s yolk. The yolk is mixed with other ingredients such as mayonnaise and mustard.

Eggs are quite versatile when it comes to making simple dishes elegant. The deviled egg is another example of taking the humble egg and transforming it with one or two simple ingredients. The final result is centerpiece-worthy. Colorful relishes, spicy peppers, pimentos or savory herbs, elevate deviled eggs. Additionally, the variety offers entirely new flavor profiles demonstrating just how delicious this family favorite can be.

Other approaches make them a little more creamy with sour cream. Or, a bit more tart with added vinegar. It’s possible to please just about every palate can be satisfied. From the traditional paprika garnish to crunchy bacon, or a little caviar, anchovy or herring, there is some devilish experimenting any cook can do.

As these are a favorite I must admit to liking my homemade recipe the best. This recipe can be elevated with cucumber garnish or a grape tomato. Bacon is also really good. I have yet to try the avocado mix in though I’ve seen plenty of recipes for it. However, I have tried them with pickle relish and/or dill. These do not make my try again list but hey if you like it go for it. I also think chives make a good garnish while adding to the flavor. This is a great way to use those hard boiled Easter eggs. It almost always makes my list for entertaining. Including game days. They are easy to make and store well for a day or two in the fridge.

The first known print reference referring to the term “deviled” about food, appeared in 1786. It was in the 19th century that it came to be used when referring to spicy or zesty food, including eggs prepared with mustard, pepper or other ingredients stuffed in the yolk cavity.

National Pierogi Day is observed annually on October 8. This is a day to enjoy this delicious side dish.

Pierogi is the plural form of the rarely used Polish word pierog. The word Pierogi can be found spelled several ways including perogi and pierogy. However you choose to spell it, pierogi are dumplings made up of unleavened dough that are first boiled then sometimes baked or fried in butter. Usually semicircular in shape, they are traditionally stuffed with a mashed potato filling, potato and cheese, potato and onion, cheese, cabbage, sauerkraut, ground meat, mushroom, spinach or fruit.

Pierogi are often served with melted butter, sour cream, fried bacon crumbles, sauteed mushrooms and onions and/or green onion. The dessert variety, those filled with a fruit filling, can be enjoyed topped with applesauce, maple syrup, chocolate sauce and/or whipped cream.

There are other similar types of dumpling-like dishes in other ethnic cuisines. 

It was the Eastern European immigrants that popularized pierogi in the United States.  At first, pierogi were a family food among the immigrants and were also found in ethnic restaurants; Freshly cooked pierogi became a staple fundraiser for ethnic churches in the post-World War II era.  By the 1960s, pierogi were being marketed for the frozen food aisles of grocery stores in many parts of the United States.

While pierogi are eaten as a main dish in other countries, Americans typically consider them to be a side dish.

  • The Pittsburgh Pirates hold a pierogi race at every home game.  Six pierogi costume-wearing runners (Potato Pete, Jalapeño Hannah, Cheese Chester, Sauerkraut Saul, Oliver Onion, and Bacon Burt) race to the finish line between innings. 
  • Whiting, Indiana celebrates an annual Pierogi Fest each July.
  • Glendon, Alberta, Canada is home to a 6000-pound pierogi which stands 25 feet tall and is made of sturdy fiberglass and steel. Piercing the giant pierogi, which was build in 1991, is an equally giant fork.

Easy Boccoli Salad

Salad

1 16 oz pkg Bacon

1/3 c red onion

1/2 c dried cranberries, Craisins

2 heads fresh broccoli florets

1 1/2 c shredded cheddar cheese

1/2 c sunflower kernels

Dressing

1/4 c Blue Cheese dressing

1/8 c Avocado oil Mayonnaise

1/8 c heavy cream

1/4 tsp salt

1/4 tsp pepper

1 Tbsp cider vinegar

2 Tsp or packets sugar or substitute

Instructions

  1. Mince onion, chop broccoli
  2. Cook bacon well. I like mine so I can simply crumble it.
  3. Add bacon, broccoli, Craisins, cheddar cheese, in lg bowl
  4. Toss to mix well
  5. Assemble dressing and pour over salad.
  6. Mix well to coat.
  7. Chill 30 minutes or until serving
  8. Add sunflower kernels right before serving. Mix well and enjoy.
