National Pecan Sandies Day is an American food holiday that is observed by cookie lovers each year on June 23rd.

My mom has been making these as a Christmas staple for years.  We like them as the podered sugar covers them.  In my opinion still warm from the oven sprinkled with confectionery sugar.  Bet you cannot eat just one….

As long as baking has been documented, cookie-like wafers have existed.  Part of the reason may be because these sturdy cookies travel very well.  Cookies have changed and evolved over the years with the modern standards of sweetness and variety.  The mild sweetness of these cookies pairs well with tea and coffee.  The texture of these melt-in-your-mouth cookies is similar to shortbread cookies.

NATIONAL APPLE STRUDEL DAY

On June 17 get whirled up in pastry dough, apples and spices.  It’s National Apple Strudel Day.  In German, the word strudel means whirlpool or eddy.  This tasty dessert is perfectly described by its German language as the sweet mixture of fruit, sugar, spices and layers of thin dough that are rolled together and baked. The result is a bubbling, flaky treat.

As a breakfast item or dessert, apple strudel goes well with coffee and tea. Consider adding it to a brunch or bake ahead for guests. Often served at bakeries and coffee shops, strudel can also be a savory dish.

NATIONAL PEANUT BUTTER COOKIE DAY

We are heating up some deliciousness on June 12 for National Peanut Butter Cookie Day! This scrumptious food occasion permits treat sweethearts and peanut butter darlings to move back from the pies and cakes to enjoy a little peanut butter treat.

Alabama’s American farming augmentation instructor, George Washington Carver, advanced the peanut broadly. Notable for his advancements, Carver incorporated 105 nut recipes from different cookbooks, agrarian announcements, and different sources. In 1916, he made an Exploration Release called How to Develop the Peaut and 105 Different ways of Setting it up for Human Consumption. The notice included three recipes calling for squashed or hacked peanuts as one of its fixings. In any case, peanut butter cookies were not one of them.

It was in the early 1920s peanut butter began to be listed as an ingredient in cookies. 

Incidentally, the peanut butter we know and love today didn’t become commercially available until the 1920s. In 1922, Joseph Rosefield kept the peanut oil from separating from the solids through this process. Afterward, he patented the process of homogenization and sold it to a company that began making a peanut butter called Peter Pan.

No one knows why we press criss-crossed fork marks into our peanut butter cookies before baking. However, homemade peanut butter cookies would just not be the same without a bit of decoration.

NATIONAL APPLESAUCE CAKE DAY

National Applesauce Cake Day is observed annually on June 6th.  This food holiday is a day to enjoy a delicious piece (or two) of the moist and tasty applesauce cake.

In any cake recipe, applesauce may be substituted for the butter or oil for a healthier alternative.   It is also said that one-half cup of applesauce may be substituted for one egg in some baking recipes for those who have egg allergies.

NATIONAL VANILLA PUDDING DAY

May 22nd is the day we recognize National Vanilla Pudding Day.  Enjoy it with a delicious dish of cold, creamy vanilla pudding.

The puddings we enjoy as desserts today are not what was commonly known as pudding at ancient dinner tables. Most medieval puddings were meat based and seasoned with herbs and spices. Even sweetened, they were usually served hot. Toward the end of the 18th century, puddings were more likely made from a grains or day old bread with nuts, fruit or meats. These puddings were used to stretch meals for a large family.

The creamy pudding we are more familiar with today is related to the custard, minus the eggs.

Necessity may be the mother of invention, but spouses who are chemists are the inventor. When you are Alfred Bird and your wife is allergic to eggs, that is very true. In 1837, Bird invented an egg-free custard powder using flavored cornstarch.

The earliest packaged pudding in the United States was marketed by My-T-Fine in 1918.  This and other puddings like them still required cooking on the stove.  The instant version came along in the mid-1940s.  On its own or as an ingredient in a larger recipe, pudding can be enjoyed in a variety of flavors.
