NATIONAL CHAI DAY

On September 21st, the aroma filling the room comes from ancient spices, perfectly steeped into a cup of delicious tea. National Chai Day celebrates the strong, satisfying tea that is ordered at cafes across the country.

While the Indian beverage dates back nearly 5,000 years, the chai served in homes and coffee shops today comes in many forms. For traditional chai, steep it with black tea leaves. Add whole milk for the richest flavor. Some even prefer almond or coconut milk. The most common spice in chai is cardamom. Though blends will vary from place to place, other spices include cinnamon, nutmeg, pepper, and fennel. Finally, sweeten the tea with pure sugar.

This time of year, we can’t resist the creamy, sweet combination, either! So, wrap your hands around a warm cup and let the aromatic steam permeate your senses. One sip will tell you how enjoyable National Chai Day is going to be!

NATIONAL CHEDDAR DAY

National Cheddar Day adds some cheesy goodness on February 13th!

Grilled cheese would be buttered bread without melt-able slices piled high; burgers would be lackluster without a perfect ooze; mac & cheese would just be…mac, to be frank. So many of our iconic American dishes simply wouldn’t be the same without a slice of cheddar’s deliciousness.

CHEDDAR HISTORY

There’s some history to this love of cheddar as well. How exactly did cheddar become a staple in so many of our favorite foods? Let us tell you!

Cheddar first rolled into being in the village of Cheddar in Somerset, England in the 12th century. While cheddar accounts for more than a third of all the cheese sold in the United States, it is a royal hit in the United Kingdom where it was created. In fact, more than half of the cheese sales in the UK go to cheddar.

In 1894, renowned cheesemaker Peter McIntosh brought his cheese-making skills to Tillamook County, Oregon where it rains a lot and the grass was always green. He taught the locals all he knew, and in due time he earned himself the nickname “Cheese King of the Coast.” Today, there are more cows than people in Tillamook, and those local farmers have since formed the farmer-owned cooperative we know today as the Tillamook County Creamery Association.

No wonder cheddar finds its way into so many recipes or a simple snack. That rich, creamy and sometimes crumbly flavor is what keeps us coming back for more, bite after delicious bite.

NATIONAL CHEDDAR DAY HISTORY

After over a century spent perfecting its award-winning cheddar recipe, Tillamook founded National Cheddar Day on February 13, 2019, to celebrate its 110th birthday and share a passion for cheddar with cheese-lovers nationwide, giving cheddar a day to shine on its own. ( You have to try thier ice cream!)

Founded on the coast of Oregon this farmer-owned cooperative continues to produce the most consistent, best tasting, high-quality dairy products made the most natural way possible. Guided by its values and the belief that everyone deserves real food that makes them feel good every day, Tillamook has earned top awards for their cheese, ice cream, sour cream, butter, and yogurt products made the Tillamook Way. Committed to unwavering values that never sacrifice quality for profit, Tillamook is excited to share National Cheddar Day with cheddar lovers everywhere for years to come.

NATIONAL CHEESE LOVER’S DAY

On National Cheese Lover’s Day, don’t feel bleu, throw a feta or act capricious. January 20th is a gouda day to kummin over and have some sharp cheddar, munster, or fontina!

There is no firm evidence of how cheese making was discovered. but legend tells us it was likely by chance that someone created the first cheese. Thousands of years ago, people transported milk and stored it in sheep’s stomachs. Left to sit a few days, the proteins would separate into curds and whey. From there, preserving the solids with salt may have seemed a logical next step. Salt was a highly valued preservative in ancient times.

The earliest record of cheese making dates back to 5,500 BCE in what is now Poland. Today there are over 1,400 varieties of cheese.

Basic Cheese Making

The basic principles behind making cheese are quite simple. Let the milk sour (or scientifically, coagulating the casein protein). Then separate the curds (solids) from the whey (liquid). The curds are then salted and left to age.

Bacteria, enzymes or fungi may be added at various stages. These along with the type of milk, temperature, time, and moisture are all controlled to produced the desired taste, color, and texture. Herbs and spices may also be added.

The nutritional value of cheese varies depending on the variety. Cottage and mozzarella cheese are at the lower end of fat and calories per serving while mascarpone and cream cheese pack it on. Marscapone makes desserts like tiramisu rich and creamy.

NATIONAL CINNAMON DAY

The holiday season warms up with National Cinnamon Day on November 1st. It’s the spice that ushers in a season while being versatile all year long.

What other spice flavors the holidays than cinnamon? Of course, cinnamon’s quintessential warmth fills our homes with welcoming scents like no other. For generations, cinnamon elicits fond memories of holidays with family. It sweetens apple pies and is the base for pumpkin spice. With just a touch, it kisses the snickerdoodle, too. We raise a toast with it on chilly evenings in frothy beverages. And cinnamon preserves our bounty all season long.

Hot, cold, savory, and sweet cinnamon fills our memories throughout the holidays. In fact, according to IRI data, cinnamon was the most purchased holiday spice in 2018. It’s the ideal spice to create gifts and bring cheer into the home. How will you use cinnamon this season?

Cinnamon Day History

McCormick & Co., Inc. founded National Cinnamon Day in 2019 to celebrate the versatility of one of the most popular spices in America’s kitchens. The holiday encourages us to make new memories and share the joy cinnamon brings with your best recipes.

NATIONAL MOLDY CHEESE DAY

National Moldy Cheese Day is a unique holiday that is observed each year on October 9.

A cheesemonger is a person who specializes in cheeses, butter, and other dairy products. They may take umbrage at the ordinary person’s offense of moldy cheese. Well, depending on the type of mold, of course. Some cheese molds, red or brown-tinged molds, for example, are offensive. Toss those bacteria-contaminated moldy cheeses in the garbage quickly and move along to the grey, blue, or green colored moldy cheeses in the fridge instead.

Like a sommelier pairs the best wines with meals, a cheesemonger provides expert advice on artisan cheeses for recipes, banquets, and sources for restaurants.

Cheeses such as Maytag blue, Roquefort, Brie, bleu, camembert, gorgonzola, and Stilton are a few of the moldy reasons cheese lovers celebrate on this day.

Moldy cheese gets such colorful phrases. For example, the fuzzy mold on a wheel of fresh brie is called cats fur. These bloomy rind cheeses take some careful maintenance. However, the results are satisfying. Isn’t the best food is a bit of a science experiment, anyway?

Gorgonzola cheese is made with three different kinds of mold spores. It’s like a milder blue cheese, but gorgonzola is creamier and earthier. Toss it with pasta and mushrooms for an outstanding meal. Also, it compliments any cheese plate. Add apples and tart, dried cranberries.

Try something new with this unique food holiday. It’s very fitting for October as its National Cheese Month, and of course, wines and pastas are celebrated this month as well.
