NATIONAL CHICKEN MONTH

For over two decades, the National Chicken Council has banded together with major chicken producers in the U.S. to promote chicken sales in September. As a result, September is known as National Chicken Month! This once slow month, as the summer grilling season waned, has turned into one of the year’s best performing sales periods. September might be the month we find out which came first, the chicken or the egg.

First domesticated for cockfighting, the chicken eventually made its way to the dinner table. Many families have their own homemade spice recipes. A major part of enjoying chicken is the spicing. Food experts have debated for years about the contents of KFC. White pepper, paprika, and even Thousand-Island dressing are among the eleven herbs and spices supposedly in the Colonel’s recipe.

There are 25 billion chickens in the world, making them the most abundant bird species. Did you know all vertebrate species lay eggs? And, all hard-shelled variety eggs originated with reptiles? Chickens, like many birds, are descendants of the dinosaurs. Chickens are relatively closely related to reptiles on the evolutionary chain. In recent decades, many researchers have started describing dinosaurs as more like flightless birds than reptiles. Even though chickens are not entirely flightless, they can get airborne enough to get over a fence or into a tree.

Ever wonder why so many different meats like rattlesnake and alligator apparently taste like chicken? Several explanations point to why mainstream Americans tend to have limited experience with judging flavor. Our taste buds, in other words, are not finely tuned. Our meat experiences are limited mostly to beef, pork, and chicken. A gourmet with a seasoned palette has a broader experience, which makes them more apt to identify exotic meats like rattlesnake and alligator.

Chicken is full of health benefits. When eaten without the skin, chicken is very lean. It is carb-free and rich in Vitamins B3 and B6, as well as two important minerals, phosphorus, and selenium. Various parts of the chicken are considered special treats in some countries. For instance, in China, chicken feet are considered a delicacy.

TURKEY LOVERS’ DAY

National Turkey Lovers’ Day on the third Sunday in June each year demands we make room for turkey on the menu this summer.

With turkey being enjoyed more often in the spring and summer than ever before, it is the established year-round meat because of its versatility. Ground turkey, turkey tenderloin, turkey sausage, and turkey bacon are some of the more popular ways to enjoy this delicious meat.

Summertime grilling includes turkey burgers, turkey drumsticks, turkey breast, and turkey hot dogs. Delis offer turkey sandwiches as a popular lunch choice, too. Turkey adds to the fast and fresh convenience for consumers who love the option for its healthy lean protein and tasty flavor.

National Turkey Lovers Month in June proves that turkey is enjoyed many more times throughout the year than Thanksgiving!

Smoked and grilled turkey are some of the many reasons we slice up this flavorful bird all year long. But we eat more than just the roast turkey. Ground turkey makes a white meat chili that keeps us coming back for more; Renaissance faires live on turkey legs; Grilled turkey breasts make excellent meals, too.

When it comes to nutrition, the bird gets great numbers, too! White meat takes the win over dark meat when comparing fat and calories – 125 to 147 calories and 2 grams to 5 grams respectively for 3 ounces of roasted turkey. Of course, that depends on how the bird is prepared. If the turkey is dunked in a deep fryer, those numbers go up.

Try turkey with pasta.  Turkey Bacon Wraps make a great lunch or dinner.  Brighten a turkey salad with grapes and nuts, a tangy cheese and layer it with crisp lettuce on a crusty bun; serve with iced tea on the back porch on a sunny day with a friend.

NATIONAL AUDUBON DAY

On April 26th each year, National Audubon Day honors the birth of John James Audubon (April 26, 1785 – January 27, 1851).

Audubon was a French-American ornithologist, naturalist, and painter noted for his extensive studies of American birds and his detailed illustrations of the birds in their natural habitats. Audubon’s greatest work wasThe Birds of America which is considered one of the finest ornithological works ever completed. His work in this book contains more than 700 North American bird species with 435 hand-colored, life-size prints of 497 bird species.

Spring is an excellent time to observe the birds John Audubon described and painted. As they migrate across the country, set out feeders to welcome them along their journey. Watch them from your window or while strolling on a path.

According to the U.S. Fish and Wildlife Service, at last count approximately 45 million people watch birds. They bird watch while they travel or all year long from their homes. Many trek around the country to see a bird for the first time in its natural habitat. So can you. Learn about their habitats and migration patterns. Or simply watch them for their color and song.
