This is a family favorite. The crispy topping also works for breading chicken tenderloins. Keto friendly and low carb, you won’t even notice the missing bread crumbs or flour. This cheese chicken dish will quickly make the top of your list for easy weeknight dinner.

Ingredients

  • 3 to 5 chicken breasts
  • 1 8oz cream cheese
  • 16 oz chopped ham
  • 8 oz Swiss cheese
  • 1 cup shredded Cheddar cheese
  • 8 oz sliced white mushrooms
  • 1/2 cup ground pork rinds
  • 1/3 cup Sunflower seeds
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 Tbsp Italian Seasoning
  • 2 Tbsp Everything Bagel Seasoning
  • 1/4 cup grayed Parmesan cheese
  • 1 tsp lemon juice
  • 2 Tbsp olive oil
  • 1/4 tsp black pepper
  • 5 slices cooked bacon crumbed

Directions

  • 13 x 9 Pyrex baking dish
  • Cut chicken into 1 inch pieces
  • Add chopped ham and mushrooms to chicken
  • Mix olive oil, lemon juice, Softened cream cheese
  • Pour over and mix with chicken.  I do it in baking dish
  • Cover with sliced Swiss cheese
  • In a bowl mix pork rinds, Sunflower seeds, Italian seasoning, Everythin bagel seasoning, Parmesan cheese, black pepper, and shredded Cheddar cheese,
  • Sprinkle over top of casserole
  • Cover with aluminum foil and bake at 350°for 1 hour.
  • Add crushed bacon sprinkled over top and (optional) green onions if desired return to oven uncovered for 15 minutes.
  • Serve warm. We like it with a green salad. This keto, low card meal rarely has leftovers.
