November 9, Chaos Never Dies

Feel like your life sometimes spirals into a chaotic mess? Then Chaos Never Dies Day on November 9 is the holiday for you.

This made-up holiday encourages people to realize that chaos is part of life and that it will never die. So instead of getting hassled by it, just take a deep breath and let go of things that create chaos in your life on this day.

How fitting that this made up holiday is settled in November, just before the chaos of holiday, planning, eating, parties, shopping, and gifting begin in earnest. So much so that many started gift shopping for the next year on December 26th. For those who didn’t start that early or at all I can promise it is easier and a lot less chaotic when not scrunched into a limited two month time period.

Homemade Chicken Noodle Soup

With the fall season change, we get cooler temperatures and football.  We also get cold and flu season.  At some point in your life, I’ll bet you’ve heard chicken soup is the popular choice when a cold or flu comes home with you. Turns out there are health benefits to this comfort food that can help you recover. Cozy plush warm robeI recommend making your own and stocking it in the freezer. As my husband is both diabetic and on a low salt diet, it’s easier to control the ingredients.  It’s great on a just a winter evening or battling a bug. Homemade Chicken Soup

2-3 lbs chicken breasts or thighs

2 tsp olive oil

3 Tbsp fresh minced garlic
3 tsp grated ginger
1 medium onion diced
1 cup diced fresh carrots
1/2 cup diced celery
4 cups low sodium chicken broth
1 tsp Italian seasoning
1 tsp black pepper
Pinch of red pepper flakes if desired.
2 cups uncooked egg noodles (use low carb options here if prefer)

Optional ingredients are 1 cup mushrooms, 16 oz fresh spinach, 2 cleaned and chopped leeks, 2 tsp turmeric, and 16 oz white beans.  I only add some or all if making a more hearty main dish. Stick with less if using for cold and flu.

  1. Cut chicken into 1/2 inch cubes.  In a Dutch oven add 2 tsp olive oil and chopped chicken.
  2. Cook over medium-high heat until chicken is seared.  (I like mine golden color for flavor).
  3. Add onions, garlic, and ginger.  Reduce heat to medium.
  4. Add carrots, Italian seasoning, celery, and both black pepper and red pepper flakes if desired.
  5. Cook about 10 minutes stirring frequently.
  6. Add chicken broth.  Reduce heat to low and cover.
  7. Simmer on low heat for about 30 – 45 minutes until carrots are tender.
  8. Add cooked pasta. Cover. Let simmer 10 minutes.
If freezing put in yogurt cups or red solo cups on a sheet tray in the freezer. Once frozen remove cups and put in a gallon freezer bag. Now it’s perfectly portioned for single servings.Make extra soup, then ladle it into red Solo cups to freeze. Grab one or two cups' worth to defrost anytime you need a quick dinner. Ok, so if you’ve searched on places like Google or Pintrest, you’ve seen thousands of entries about blogging. Most tell you how easy it is and give suggestions like I am, “What is the difference you ask? I am only recommending what I actually use. I’ve studied and tried quite a few to find what works the best for me.

Okay so you’ve made the hard choices and even written the posts. Now what? The best way to get viewers is to tell your friends. Start sharing the news on your social media pages. Positive Thinking Day

September 13, 2019, in spite of being Friday the 13th is Positive Thinking Day.

Is life getting you down? If your answer is a yes, then Positive Thinking Day (PTD) on September 13 is just the holiday you need to celebrate. Choose to be positive even with all those Friday the 13th superstitions going around. My black cat, for instance brings nothing but love and cuddles.

Choose how your day will be.

PTD is a day to set aside all negative thoughts and see that the glass is always half full.

The stresses and struggles of daily life can sometimes fill our heads with pessimistic thoughts. This unofficial holiday promotes the idea that negative thoughts do more harm than good – they drain energy, create more stress and can make one a less likeable person. Nobody wants to spend time with someone who is always negative and pessimistic.

The holiday, also known as International Positive Thinking Day encourages people to deal with difficult situations in life with optimism and positivity.

How to Celebrate?

  • Think positive! If you are having trouble believe that the glass is half full, then have a friend or a loved one reaffirm you.
  • Take or sit in a positive thinking seminar. Sometimes hearing about the benefits of positive thinking from an uninvested party can help.
  • Make a conscious decision not to put yourself down every time you do something wrong.
  • Laugh as much as you can. Laughter can reduce stress and decrease the urge to think negatively. Go out for a comedy show or movie, do a marathon of your favorite comedy TV show or read a comic novel. You will see a marked difference in how you feel after a few laughs. After all, someone wise did once say laughter is the best medicine!
  • Still feeling a bit low? Turn that pity party into an awesome dance party. Studies have shown that physical exercise can help alleviate mood and promotes positive thinking.
  • Do something nice for yourself, a loved one or a stranger – doing good deeds can help increase levels of optimism.

Did You Know…

August 22nd Be an Angel Day

August 22 is Be An Angel Day. Established in 1993 by Jaune Howard Feldman, the day encourages people to be angels to those in need.

In many religions, angels are supernatural spirits that are thought to be responsible for protecting humans.

Are you an angel?  Be one today. 😇

Are you an Angel? This day reminds us that even though we can’t be actual angels, we can create the kindness they are known for. Showing kindness and goodness to our fellow human beings is not hard – all we need to do is to stop thinking about ourselves for a while, and to think about how we can make the world a nicer and kinder place.

How to Celebrate?

  • Be kind to others. Do something to help a stranger.


  • Commit Random acts of kindness,  without any expectations of reciprocation, do one today and everyday. For example, give up your seat on the bus or train, pay for the coffee the person behind you at the coffee shop, or leave a small gift in your neighbor’s mailbox.

  • Do something that will bring a smile to someones face.
  • If you know of someone who is going through a difficult time, give them your support and let them know that you are there for them. Help them out in their difficult times.

  • If someone is being an angel to you, thank them, and let them know that their kindness appreciated.

The person you make smile today may need it far more than you know.

At the Gary Sinise Foundation, we serve our nation by honoring our defenders, veterans, first responders, their families, and those in need.We do this by creating and supporting unique programs designed to entertain, educate, inspire, strengthen, and build communities.

Animal Allies Florida

  • Reduce the number of animals put down every year in the Florida Panhandle (more than 12,000)
  • Spay or neuter as many animals as possible (especially feral cats)
  • Educate the public about the importance of spay and neuter
  • Help rehome animals in need

Animal Allies Florida was founded in December 2010 to help animals in our community.  Many of us have been doing this work for years on our own, out of our own pockets.  By creating Animal Allies , we can apply for grants, fundraise and join programs that support our efforts.  We can combine forces, share knowledge, and support each other, instead of trudging along on our own. Originally called Emerald Coast Animal Allies or ECAA for short, we changed our name in 2015 because many people though ECAA meant Escambia County Animal Shelter.  Although we support the county animal shelter’s efforts to become no kill, we don’t wish to be associated with them because we ARE NO KILL meaning no healthy animal is put down.

Volunteer your time.  Give back
Whatever you choose, know that you are making a real difference in someone’s life.  Sometimes the biggest gift you can give another is to simply be there and listen.  Each of us makes an impact in the lives we touch.  I always compare it to touching the surface of a pond. Those ripples will be felt by others, I try to make my ripples count.  I hope this inspires you to get involved, give, and simply be kind in a world that so often is not. Together all those positive ripples add up and shape our world.
