NATIONAL PEACH PIE DAY

On August National Peach Pie Day is observed annually on August 24th.  We celebrate this mouth-watering dessert during the heart of the Peach harvest season. Don’t forget the à la mode! Try it with Peach ice cream.

Generally speaking, there are two types of peaches – freestone and clingstone. The difference is in the way the flesh comes away from the pit in the middle of the peach. When the meat comes away freely from the stone, the peach is a freestone peach; if the flesh clings to it, it’s a clingstone.

While Georgia may be the first state to come to mind when we think of peaches, California actually leads the nation in production. In the United States, 20 states produce peaches commercially. Besides California and Georgia, the other two top producers are South Carolina and New Jersey. Pennsylvania and Washington grow a lot of peaches, too.

Find peaches at a farmers market near you.

Peaches are best enjoyed ripe, juicy, and fresh. However, when that’s not possible, pastry comes to the rescue! The sweet juices of peaches come to life when we add a little sugar and seasonings. Envelope them in a flakey crust and bake for about an hour and the syrupy sweetness clings to the fruit. Add vanilla ice cream for a creamy reminder that summer isn’t quite over. Not yet, anyway.

NATIONAL CHOCOLATE PECAN PIE DAY

On August 20th, National Chocolate Pecan Pie Day lets you have your chocolate and pie, too! (National Pecan Pie Day is observed each year on July 12th if chocolate isn’t your flavor, but we don’t know anyone like that.) 

Just like the original, chocolate pecan pie goes well with ice cream. Another southern delight, this treat features crisp pecans. Pecan pies fall under the sugar pie category which gives them a gooey, almost caramel center. Depending on the recipe, different sugars make the sweet batter for the pie. Both brown and white sugars can be used, but so can molasses. Corn syrup is a common ingredient as well. Even honey is used.

There is one ingredient that pops up from time to time that shouldn’t surprise some cooks. Some recipes call for a little bit of bourbon, rum or whiskey. Since these spirits hail from the southern parts of North America, seasoning with them is a natural method.

While pecan pies include eggs in the recipe as a binder, it’s interesting to note another sugar pie that was made when eggs were out of season. The pie is called a sugar cream pie. Though we can’t imagine there being a season for eggs, birds lay more eggs in spring and summer than they do in the fall and winter. Chickens rely on the sun to know when to lay eggs. When the days are shorter, they lay fewer eggs. In the winter, they may lay no eggs at all.

So, on small farms when the hens stopped laying, a sugar cream pie offered an alternative since no eggs are required to make it. Both chocolate pecan pie and sugar cream are delicious!

NATIONAL RASPBERRIES N’ CREAM DAY

Enjoy fresh berries in cream on August 7th during National Raspberries N’ Cream Day. With the raspberry season in full swing, what better way to celebrate than with this simple and delicious treat.

There are several days on the calendar celebrating raspberries. We just finished National Raspberry Cake Day last week.

At one time, raspberries were a midsummer crop. However, new technology, cultivars, and transportation make it possible to enjoy these sweet berries all year long. Because of these new technologies, raspberry growers now have an extended selling season.

Did You Know?

  • There are more than 200 species of raspberries.
  • Scotland grows an abundance of raspberries. Raspberries love their fertile, well-drained soils.
  • However, Russia produces the most raspberries in the world at 120,000 tons per year.
  • Besides red, raspberries also come in purple, gold and black colors.
  • Unlike other fruits, raspberries don’t ripen off the shrub. If picked green, the raspberry will not sweeten or soften.

NATIONAL RASPBERRY CREAM PIE DAY

On August 1st, National Raspberry Cream Pie Day takes advantage of the ripe berries available this time of year. If you’re fortunate enough to enjoy some fresh-baked raspberry cream pie, it’s a day to celebrate!  

Raspberries are the edible fruit of the raspberry plant. Not only do they grow on woody stemmed perennials, but they’re a very commercial crop, too. If their thorny stems remind you of a rose bush, that’s because they are in the rose family. Their genus name is Rubus.   

Approximately 100 tiny drupelets cling together to make up one raspberry. Raspberry pulp and juice fill the drupelets. The drupelets adhere to a receptacle attached to a stem. Once the receptacle is removed, the raspberry is left with a hollow core.

When you’re eating your pie, keep in mind that raspberries are rich in vitamin C, manganese, and fiber. They also contain vitamins B1, B3, folic acid, magnesium, copper, and iron. 

  • All temperate regions of the world grow raspberries.
  • At one time, raspberries were a midsummer crop. However, with new technology, cultivars, and transportation,
    they can now be obtained year-round.
  • Did you know, an individual raspberry weighs 0.11 – 0.18 oz.
  • One raspberry bush can yield several hundred berries a year.

NATIONAL PECAN PIE DAY

Grab a slice on July 12th and celebrate National Pecan Pie Day! Mix up the ingredients using primarily corn syrup, pecan nuts, salt, and vanilla. Occasionally, recipes vary by including sugar syrup and molasses or maple syrup. Other additions include chocolate and bourbon whiskey in some regions of the country. Top it all off with vanilla ice cream or whipped cream.

Pecan pie is considered a specialty of Southern U.S. cuisine.

Many attempts to trace the origins of the pecan pie have not been successful. The earliest dated recipes come from 1897. However, claims of the pie being made in the early 1800s in Louisiana exist. One of the earliest recipes for a pecan pie appeared in the Lady’s Home Journal in 1897. The recipe for the “Texas Pecan Pie” was later reprinted in several newspapers across the country. It included six ingredients – sugar, sweet milk, pecan kernels, eggs, and flour. The recipe is basically directions for a custard base, unlike the pecan pies we know today. 

Well-known cookbooks such as Fannie Farmer and The Joy of Cooking did not include this dessert until 1940. By then, Karo syrup found its way to the pantry shelves. Of course, the makers of the sweet syrup increased the popularity of pecan pie. Their company claimed the pie was a “discovery” in the 1930s by a corporate sales executive’s wife as a “new use for corn syrup.”
