Growing up holidays were spent in a combination of our home and my grandparents. My grandmother always hosted Thanksgiving, Christmas, Easter and others. She is a planner and would divide the menu between all families so they could bring, sides, desserts, or other.
She usually chose based on what each specialty was. My mother makes homemade bread and pastries that will rival any bakery you will find short of a trip across the pond to Paris. My aunts made various salads, or sides that rarely had leftovers.
My grandmother would plan the main dish be it turkey, ham, roast beef or other. She also made homemade mashed potatoes from scratch, on Thanksgiving and Christmas. Her schedule gave her the time to do the labor intensive prep for it. So when I moved away and began hosting myself, I wanted that same flavor.
It is not found in easy premade or instant potatoes. We tried most varieties and brands, they just dont make the grade. The labor intensive version starts with boiling all the potatoes, removing the skins, slight chopping and partly mashing the potatoes. Then adding butter, cream, in stand mixer with cooked potatoes. Only mixing enough to well distribute ingredients without making the potatoes the consistancy of creamed soup.
As someone who worked in the retail industry, finding time can be challenging so I needed a better way to get the taste I want without spending hours in the kitchen..
- 2 Ore Ida homestyle steam and mash potatoes
- 1 c sour cream
- 1/2 c milk
- 3 oz blue cheese
- 2 Tbsp butter
- Steam as directed in microwave
- In large 3 at glass dish add butter, sour cream, blue cheese, and milk
- Combine together before adding potatoes
- Empty steamed potatoes into dish
- I did one at a time and simply used a fork. Hand beater works well too
- Mash potatoes into almost smooth consistency
- Add second bag and do the same
- Switch to large spoon and gently fold all ingredients together
- Top with extra butter if desired
- Serve warm. Small lumps are expected
