NATIONAL MILK CHOCOLATE DAY

On July 28th dive into the ever-popular National Milk Chocolate Day. When it comes to chocolate, this sweet easily pleases.

On average, we recognize three chocolate holidays a month. Interestingly, July celebrates chocolate as often as February. 

Solid chocolate, when combined with either powdered, liquid or condensed milk, is known as milk chocolate. While candy bar makers use milk chocolate to make their most popular candy bars, the treat isn’t the healthiest of the chocolates. Dark chocolate takes home the honors for nutrition. With added sugar and fat, milk chocolate packs on the calories. Add to that, milk chocolate’s popularity in baked goods, and the calorie count keeps going up. Don’t forget, we add it to specialty coffee drinks and other beverages, too.

In fact, we’ve been adding milk to chocolate beverages since the mid-17th century. But, in 1875 Daniel Peter invented milk chocolate by mixing a powdered milk developed by Henri Nestlé with the liquor. It’s been milk chocolate bliss ever since. 

Since the days are heating up, melt that chocolate down. Drizzle it on some ice cream or mix it into some popcorn. Nobody said this holiday would be difficult.

NATIONAL NOUGAT DAY

National Nougat Day on March 26th celebrates a soft and chewy or sometimes hard and crunchy candy often found at the center of a candy bar. 

Made by whipping egg whites together and adding honey or sugar, roasted nuts, and sometimes candied fruit, some say nougat has been a sweet treat since ancient Rome. Enjoyed both as a candy all on its own or paired with chocolate or other flavorings.

Recipes range from the more traditional nougat made with almonds and honey to those with hints of citrus.In Italy, they call it torrone. In Spain, a nougat is called turrón. The United States has a version made with corn syrup called divinity.

Three basic kinds of nougats include:

1.     White nougat – made with beaten egg whites and honey.
2.     Brown nougat – made without egg whites and has a firmer, often crunchy texture.
3.     Viennese or German nougat – chocolate and nut praline

In the United States, modern candy bar makers use a different recipe than the traditional nougat. Today they make of a mixture of sucrose and corn syrup aerated with a whipping agent such as egg white or hydrolyzed soy protein or gelatin. It is the preferred and often used ingredient of large candy companies because it is inexpensive to make and used as a filler.

NATIONAL K9 VETERANS DAY

March 13th recognizes National K9 Veterans Day and the dedicated K9 units who’ve served since World War II. 

A lot of things changed after the bombing of Pearl Harbor in 1941. We rationed oil, leather, and rubber. The military draft men into service. Women rolled up their sleeves and built war supplies.

And dogs were called to duty. During the first world war, the United States took notice of the European use of canines as sentries, message carriers, and several other functions.

A private citizen, Mrs. Alene Erlanger initiated a program called Dogs for Defense. Along with the American Kennel Club and a handful of breeders, the group aimed to train the dogs for military use.

By November of 1942, the military prepared the first Dogs for Defense for duty in North Africa. While at first, they were gun shy, they proved to be well trained.

As the war progressed, Dogs for Defense was unable to keep up with the demand, and the Remount Branch, Service Installations Divisions took over the training of the dogs.

Over the years, the military, police, and rescue have developed a variety of training methods for K9 units. Their training is tailored to meet the demands of the job, and each animal and handler carries out his or her duties to the fullest.

K9 service does not end with just serving in the military, now specialty trained dogs help our returning people service members as well. Coping with things like PTSD, or other veteran related issues can be dramatically helped by special service dogs.

NATIONAL K9 VETERANS DAY HISTORY

National K9 Veterans Day is celebrated on March 13th on the official birthday of the US Army K9 Corps, which was formed in 1942.  Joseph White, a retired military working dog trainer, originated the idea for the day.

Smooth, creamy, sensuous
Be it dark, milk, white, bittersweet, liquid or solid…Most everyone has their favorite – be it wrapped around a caramel, drizzled over a bowl of ice cream, or in a steamy cup of hot chocolate on a cold wintry night.
Chocolate is a food that elicits an almost visceral response…and it brings back memories… of places and people we love. Brings thoughts of love and romance and desire.

So what is it about chocolate that gives it such mysterious power.
Chocolate contains around 300 chemical compounds that act as a mild stimulant, an anti-depressant, and even an aphrodisiac. The emotional lift, the increase in sexual desire and responsiveness and general “feel good” feeling that eating chocolate causes is a result of the increase in the serotonin levels in the brain.

Although it is not known for certain how long chocolate has been consumed by man, it is believed to be before the Myans. Back then, chocolate was far different from what we commonly think of as chocolate… It was a bitter tasting drink made from the ground beans and often containing chili pepper. It wasn’t until around the 17th century when the Spanish brought cacao back to Europe and the chili was replaced by sugar, that chocolate evolved into something similar to what we know as chocolate.

Chocolate comes from the cacao tree (Theobroma cacao) … a strange looking tree with large football shaped pods growing perpendicular to the trunk and branches.

These pods vary in color from green, to yellow, to red, depending on their maturity. Once you strip off the rippled outer layer of the pod you discover inside there is a white fibrous pulp that has a mild bittersweet chocolate flavor and buried within this pulp are seeds that when processed become what most of us true chocolate addicts know as the “chocolate beans”. Depending on which of the three varieties of cacao tree you are harvesting the pod from, the beans within the pods are purple or white.

Without going too deeply into to the complex process and the many steps to produce what we know as chocolate, suffice it to say that the beans are roasted, the hard shells removed, then the remaining “nibs” are mashed. At this point sugar and vanilla are added to the chocolate liquor. After this the liquor is heated to evenly blend the liquid – then it undergoes the tempering process, and finally the chocolate is molded, cooled and hardened.

Most of us really don’t care about all the finer points of how chocolate is made. We care about TASTE. While there are many fine chocolatiers throughout the world, the most famous for their chocolate are the Swiss. In fact it was Swiss Chemist Henri Nestle, who first mixed powdered milk into chocolate to invent milk chocolate. So, depending on your personal preference be it for Hershey’s, Nestles, Ghiradelli, Godiva, Lindt/Lindor, Mars, Cadbury, etc…. Chocolate is a little bit of heaven.

And with Valentines Day just around the corner, jewelry, flowers, and chocolates are the items most often associated with this holiday that celebrates LOVE. So, whether it is a heart shaped box of assorted chocolates, chocolate truffles, chocolate covered strawberries or plain – chocolate is almost a must for Valentines Day – for both the men and women. Yes, for the men too. In case you missed it, they now make tool boxes, tools, footballs, etc in chocolate for the guys.

I personally like most any kind of chocolate, but that said, I must admit to having a preference for dark chocolate and a special weakness for Frango mints. They are made by a Chicago candy company by the name of Cupid Candies. My sister, who lives in Wisconsin, sends me a box nearly every Christmas and I hoard and ration them to make my meager supply last as long as possible. Originally, they were sold nearly exclusively by Marshall Field’s. In 2005, Marshall Field’s was purchased by Macy’s, and Frango mints may be purchased at Macy’s and they can also be found on Amazon. Thank the Lord !!! I don’t have a Macy’s locally, but with the internet, Macy’s and Amazon are as near as my computer and I can get my fix of Frango mints when I inevitably run out.

National Chocolate Day and World Chocolate Day do in fact exist, while not the day after Valentine’s, Easter, or Holloween, please enjoy the great markdowns on chocolate. The official Chocolate Day is October 28 2021.  I also heard a news story on a major network report that scientists have determine that women require chocolate in our diets to level our hormones. If it fits in my calorie count, I refuse to feel guilty!

NATIONAL DARK CHOCOLATE DAY

On February 1st, National Dark Chocolate Day reminds us to indulge a little. Many tout dark chocolate as the healthier chocolate. However, for some, it can be an acquired taste.

Also known as bittersweet chocolate, dark chocolate is different from milk chocolate. Candy makers add milk or butter to milk chocolate, giving it a creamier consistency. Dark chocolate includes no added milk or butter. Instead, the percentage of cocoa solids remaining in the chocolate determines how dark the chocolate is. The higher the ratio, the darker the chocolate. It may also have a slightly bitter taste.

Chocolate comes from the seed of the tropical Theobroma cacao tree. We have been cultivating cacao for at least three millennia, and the plant grows in Mexico, Central America, and Northern South America. Our earliest known documentation of using cacao seeds dates to around 1100 BC.

Fermentation helps develop the flavor of the cacao seeds. Otherwise, the seeds are too bitter to eat. Once fermented, the beans are dried, cleaned, and roasted. After roasting, the shell is removed to produce cacao nibs. Processors then ground the cocoa nips into cocoa mass, pure chocolate in rough form. Next, they usually liquefy the cocoa mass and mold it with or without other ingredients. At this point in the process, it is called chocolate liquor. The chocolate liquor may then be processed into two components: cocoa solids and cocoa butter.

Besides being lower in calories and fat, dark chocolate has many other health benefits. It also serves as a decadent ingredient in many desserts and sauces.
