The trick to these, like so many have discovered. Is getting the texture and spices into those delectable slices of Gyro meat. After much research, trial and error this is what I have perfected.
As this takes a good bit of time and work, I highly recommend making the meat ahead of time in enough quality to freeze several packages for future use.

1/2 small red onion thinly sliced
1/2 medium cucumber chopped or shredded
Halved Grape or Roma tomatoes chopped
4 or 5 strips if Jen’s Gyro meat or chicken strips
Crumbled feta cheese
Flat Naan bread if you can’t find it, large flour tortillas work well
2 Tbsps Tazziki Sauce
Using on piece of Naan flatbread or tortilla fill with Gyros Meat or Chicken strips
Add red onion slices, cucumber, tomatoes, feta cheese, and Taziki Sauce.
Roll into tube enclosing one edge. Use aluminum foil to hold closed edge if desired.
This will quickly become a family favorite. You can add black olives or even shredded lettuce if desired.
