These soft pillowy cookies melt in your mouth and taste great decorated or not. If taking these to a party or event I really reccomend a double batch. My family is always disappointed if I give them all away. They make excellent Christmas gifts too.
Ingredients
1 cup granulated sugar 1/2 cup butter (we like unsalted) 2 eggs (room temperature is best) 1/2 cup sour cream 2 tsp pure Vanilla extract 3 cups all purpose flour (For extra fluffy cookie use cake flour) 1 1/2 tsp Baking Powder (check date) 1/2 tsp Baking soda 1/2 tsp iodized salt
Cream butter and sugar until light and fluffy about 7 minutes on high
Add Sour cream, eggs and vanilla
Mix well until combined
In separate bowl mix flour, baking powder, salt, baking soda
Whisk well to combine
Add flour mixture to creamed butter on low speed about a cup at a time
Cover and refrigerate at least 3 hours but,overnight is best. You can freeze for ready made cookie dough. Just seal well.
Line baking sheets with baking mats or parchment paper
Scoop about 3 Tbsp of dough into a round ball, place about 1 1/2 inches apart on baking sheet
Flatten balls gently with bottom of a glass.
Pro-tip try a decorative glass like some juice glasses to imprint ready made stamp decoration on cookie. Or use a wire whisk to gently press a star design
Bake in pre-heated 350° oven about 11 to 12 minutes. After cooling about 5 minutes remove to wire rack to cool completely if decorating
