January invites plenty of opportunities for want of a warm cozy dinner. This warming meal hits the spot as a comfort food you’ll want the whole year through. Makes a great freezer meal too.
Ingredients
1 small onion
3 tbsp minced garlic divided
1 c sour cream
1 8oz pkg cream cheese
2 12oz pkg smokey links
1 10 oz bag fresh spinach
2 tsp italian seasoning divided
2 tsp Adobe seasoning divided
1 pt grape tomatoes
1 19oz bag frozen cheese tortellini
2 tbsp fresh chopped chives
2 stalks chopped celery
1 c milk
1/4 cup mozzarella cheese
Directions
Cut each smokey link in 3 or 4 slices. Add onion, celery, 1 tsp adobe season, 1 tsp italian Seasoning, garlic, 2 Tbsp butter in dutch oven over medium heat.
Combine sour cream, cream cheese, remaining adobe and italian seasonings, 1 tsp minced garlic, pinch red pepper flakes
Brown sausage mixture 5 to 7 minutes. Add 2 tbsp butter and 2-3 tbsp flour making a roux for white sauce. Add 1 cup milk then sour cream mixture, fresh spinach, 2 cans drained cannellini beans, cover and simmer about 6 minutes. Add tortellini. Cook another 4 minutes. Add halved grape tomatoes and serve. Sprinkle with fresh chives.
We served with classic grilled cheese like mom taught us to make. The biggest secret is butter on all sides of bread and golden on outside.
