Ingredients
2 lbs boneless skinless chicken breasts
1 – 16 oz box fettuccine noodles or zoodles for lower carb ( I make this the only carbs I eat in a day)
1 – 10 oz pkg fresh spinach
4 Tbsp butter
3 Tbsp Flour
1 pint heavy cream
1 cup fresh grated Parmesan cheese
1/2 cup mozzarella cheese
1/4 cup white wine
1 pint grape tomatoes cut in half
10 Fresh Basil leaves, chopped

Directions
Bring lg saucepan of water to boil and add pasta. Do not overcook it!Cut raw chicken into 1-inch cubes.
In large saute pan add 2 Tbsp olive oil
Brown chicken until golden in color about 5 -6 minutes.
Remove chicken from pan and set aside.
Deglaze pan with white wine.
Add butter and heat on medium till melted.
Add flour until a thick paste forms
Add heavy cream and stir well.
Add cheeses and mix until melted. Add chicken back into pan and put fresh spinach on top. Cover until spinach wilts.
Add cooked pasta and stir well.
Add raw tomatoes just before serving
Enjoy with a glass of white wine if desired
