Loaded Potato Soup

2 lbs Yukon Gold Potatoes cut into 1/2 inch chunks
1 medium yellow onion diced
1 pint heavy cream
1/2 cup milk
1 cup mozzarella cheese
1/4 cup Sour Cream
4 Tbsp Chives ( I use fresh minced)
1/2 tsp Italian seasoning
1/2 tsp black pepper
1/4 tsp salt
Pinch of red pepper flakes if desired
1 cup shredded cheddar cheese
8 strips crispy bacon, crumbled

1 – 8oz pkg cream cheese
1.5 lbs dubbed ham chucks
2 diced stalks celery


In lined crockpot add ham chunks, potatoes, celery, salt, pepper, Italian seasoning, onion, heavy cream, and 1/2 cup milk
Cook on low 4 – 6 hours
1 hour before serving add cream cheese, sour cream, mozzarella and cheddar cheeses. 
Add freshly chopped chives and mix well. 
Serve warm topped with crumbled bacon, shredded cheddar cheese, and a scoop of sour cream.
Garnish with chopped chives
